It is important to work the dough well to ensure there are no lumps. We gradually add water, stirring continuously, until we achieve a softer consistency that is not liquid. The dough should be elastic and easy to handle, so we take care not to add too much water at once. While we are working on the dough, we put a large pot of water to boil, adding a tablespoon of salt to season the dumplings. The water must boil well before we add the dough. When the water reaches boiling point, we can start forming the dumplings. There are two methods we can use to do this: either we use a special dumpling cutter or we can use a teaspoon. If we opt for the teaspoon, we make sure to dip it in hot water so that the dough does not stick. We take small portions of dough and let them drop into the boiling water.
