Citrus salad with telemea and mint no. 100

Citrus salad with telemea and mint no. 100 brings juicy slices and fresh cheese together on a platter. I carefully remove the white pith from the grapefruit, then roll up the mint leaves, gently crush them and cut them into strips. Prep: 20 minutes. Cook: 0 minutes. Total time: 20 minutes. Servings: 4. About 235 kcal and 10 g of protein per serving.
Ingredients
- 200 g fresh
- lightly salted cow’s-milk telemea
- 2 oranges
- 1 red grapefruit
- 1 mandarin
- 30 ml lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon Himalayan salt with chilli
- 10 g mint leaves
- 100 g blueberries
Preparation
1. Peel the oranges, grapefruit and mandarin. Carefully remove the white pith from the grapefruit, then halve the citrus fruits and slice them. Wash the blueberries and mint and pat them dry. 2. Arrange the citrus slices on a platter and drizzle with 30 ml of lemon juice. Cut the telemea into small cubes and scatter them over the top. 3. Drizzle with 1 tablespoon of olive oil and grind 1/2 teaspoon of Himalayan salt with chilli over the salad. Roll up, gently crush and cut 5 g of mint leaves into strips. 4. Sprinkle over the mint strips, then garnish with the blueberries and the other 5 g of mint leaves.
Notes
Choose firm citrus fruits that feel heavy for their size. Very soft ones crush easily when sliced. Taste the telemea before grinding on the salt, as some pieces are already salty enough. Toasted bread, cut into thin slices, is what I serve alongside the platter. I adjust the amount to the number of people and, if I double it, divide it between two platters so the slices aren’t crowded. The telemea can be replaced with 200 g of brie or gorgonzola; both options contain dairy. For a picnic, pack the lemon juice separately and add it when you unpack the platter. The salad is best eaten freshly assembled; if it sits, the citrus releases juice and the slices soften.
Frequently asked questions
Why can grapefruit still taste bitter?
Remove the membranes between the segments, not just the outer pith. If the grapefruit has a thick peel, use only the flesh.
Can I replace the mandarin with a blood orange?
Yes, use one small blood orange instead, with about 120 g of flesh.
How do I slice citrus without crushing it?
Use a serrated knife and cut slices about 5 mm thick, especially if the fruit is very ripe.
