We start by preparing the necessary ingredients to create these delicious cookies, which combine the unique flavors of cardamom and nutmeg, offering a perfect taste experience. In a large bowl, we place the soft butter, ensuring it has been left at room temperature to soften properly. On top of the butter, we add the powdered sugar, which will give the cookies a fine texture and a sweet taste. We mix the two ingredients well with a spatula or mixer until we achieve a smooth and creamy composition. In another bowl, we combine the flour with the cardamom powder, nutmeg, salt, and baking powder. These spices not only enrich the flavor of the cookies but also give them an exotic touch. We start to gradually add the dry ingredient mixture over the butter and sugar composition, mixing carefully each time to ensure there are no lumps. If at the end of this process we notice that the dough is too dry, do not hesitate to add a teaspoon of milk and knead gently until we achieve a pleasant, slightly moldable but firm consistency. Once the dough is ready, we cover it with plastic wrap and let it rest for 15 minutes. This resting time will allow the flavors to meld, resulting in tastier cookies. During this time, we can prepare our baking tray, which we will line with special paper. After resting, we start shaping the cookies: we form equal-sized balls to ensure they bake evenly. We carefully place them on the baking tray, leaving enough space between them, as they will spread during baking. For an attractive appearance, we gently flatten each ball and add a piece of pistachio or a slice of almond on top. These toppings not only enhance the look but also add a crunchy texture. We preheat the oven to 180 °C (350 °F) and bake the cookies for about 15 minutes. It is important to look for signs of baking: the cookies should be whitish on the surface, and the bottom should have a slight golden hue. After removing them from the oven, it is essential not to overbake them, as they will be very soft and fragile. As they cool, they will harden, becoming perfect to enjoy. It is crucial that when shaping the dough balls, we focus on uniformity and ensure that the surface is smooth, avoiding any cracks.
