Msemmen (Moroccan recipe)

To achieve a perfect dough, start by mixing the two types of flour with salt in a large bowl. This mixture will provide a pleasant texture and a richer taste to the final dish. Gradually add room temperature water, being careful not to exceed the necessary amount. In my case, I used less than 250 ml of water, as the flour absorbed just the right amount. It is essential to obtain a dough that is not too soft and sticky, but rather a dough similar to that for noodles, which is easy to handle. Once you have a homogeneous mixture, start kneading the dough for 15-20 minutes. This step is crucial to activate the gluten in the flour, which will give elasticity to the dough. If you prefer to save time, you can use a food processor or a bread machine to knead the dough, thus significantly reducing the working time. Once you have finished kneading, let the dough rest for about 30 minutes. After this period, knead it again for another 5 minutes to improve its texture. After the dough has had enough time to rest, grease your hands with oil and divide it into pieces the size of a clementine or a golf ball. Each piece should be rolled out on an oiled surface using a well-oiled rolling pin to avoid sticking. The goal is to achieve a very thin sheet, but elastic enough not to tear. Proper kneading will ensure a soft and silky consistency. Once the sheet is rolled out, brush it with a mixture of melted butter and oil, then sprinkle a teaspoon of durum wheat flour. Fold the sheet into thirds, bringing the left side to the center first, followed by the right side. Brush again and sprinkle flour, then bring the top part towards the center and the bottom part over it. Press gently with your fingers to stick well, then let the dough rest a bit before baking. Cook in a pan over low heat for 5 minutes on each side. Make sure the pan has a thick bottom, and if necessary, add an iron plate underneath to prevent burning. This will ensure even cooking and a crispy texture. Once finished, you will have a delicious dish, perfect for serving with various fillings or sauces.
