Lachha Paratha (Layered Bread)

To prepare a delicious flatbread, we will start by mixing the salt and flours in a large bowl. It is essential to combine them well so that the salt is evenly distributed throughout the flour. Once we have a homogeneous mixture, we begin to gradually add the milk, little by little, mixing with a fork. It is important not to rush this process, as we want to achieve a soft, non-sticky dough that is easy to shape. We also add a tablespoon of oil to give the dough a finer texture and help it remain elastic. We continue to add milk or, if you prefer, water, until the dough becomes perfect. After achieving the desired consistency, we will knead the dough for a few minutes. This is a crucial step, as kneading helps develop the gluten, which will make the dough fluffier. Once we have finished kneading, we will place the dough in a clean bowl, covering it with a damp towel. We let the dough rest for about 30 minutes, which will allow it to rise and become easier to handle. After the resting time has expired, we divide the dough into 7-8 equal parts, which we keep in a covered bowl to prevent drying out. On a lightly floured work surface, we take the first piece of dough and roll it out with a rolling pin, forming a thin disc about 2-3 mm thick. We brush this disc with oil using a brush, then sprinkle flour on top to prevent sticking. We fold the dough in a fan shape, which will add layers and make the bread even fluffier. After obtaining the folded dough, we continue to roll it out with the rolling pin, being careful not to tear it. Once we have a thin disc, we spiral it up, tucking the end underneath. We place the resulting spiral on a plate and repeat the process with the other pieces of dough. We prepare a hot skillet and wait for it to heat up well. When ready, we place the first disc in the skillet, making sure to move the skillet from time to time to prevent burning. We observe how the dough puffs up, a sign that it is baking perfectly. When we see that it has browned on one side, we flip it to the other side, continuing to brush oil on the baked side to achieve a golden, crispy crust. We repeat this process for each disc, being careful that the second side cooks much faster, usually in about 3 minutes. This flatbread can be consumed alongside a hearty dish, a delicious stew, or even a warm soup. Additionally, if you fill it with various ingredients, it can become a meal in itself, perfect alongside yogurt. For a vegan option, you can use water or various types of plant-based milk, such as soy, coconut, or almond milk, to adapt it to dietary tastes and preferences. So, all that’s left is to enjoy the result of your work!
