To prepare this delicious and refined jelly cake, we will start by ensuring we have all the ingredients at hand. In a small cup, we put the gelatin and cover it with cold water, stirring gently to help it hydrate. It is important to let the gelatin rest for about 10-15 minutes so that it swells properly. Meanwhile, we take care of the eggs. Separate the egg whites from the yolks, being careful not to leave any traces of yolk in the whites, as this would prevent a firm foam from forming. In a large bowl, using an electric mixer, we beat the egg whites until they become frothy, then gradually add a cup of sugar, continuing to mix until a glossy and firm foam forms. Once the egg whites are ready, we put them in the fridge to cool. In a saucepan, we put the egg yolks together with a cup of sugar and the hydrated gelatin. Place this saucepan over low heat, stirring constantly to avoid lumps and ensure even dissolution of the gelatin. When the mixture becomes homogeneous and the sugar has completely melted, we take the saucepan off the heat and let it cool slightly. In another bowl, we whip the cream until it becomes firm. When the yolk mixture has cooled, we carefully add it over the whipped cream, gently folding with a spatula to avoid losing air from the cream. Then, we add the beaten egg whites, continuing to mix gently. It is essential to achieve a uniform but airy mixture to ensure a fluffy texture. Now comes the creative part: we add the chopped fruits, which can be strawberries, raspberries, peaches, or any other preferred fruit. We gently mix to distribute them evenly in the mixture. Once everything is well integrated, we prepare the pans. Grease them with a little oil, which will make it easier to release the cake after it cools. If you have springform pans, you won’t have to worry about the release. We fill the pans with the obtained mixture and refrigerate them for at least 4 hours, or until the cake has completely set. Although it may seem like a complex recipe, I assure you it is extremely simple and does not require much preparation time.
