Mushroom Pastries I

To prepare a delicious recipe for mushroom and sour cream rolls, we start by ensuring we have all the necessary ingredients at hand. You will need a large onion, a few cloves of garlic, a generous amount of fresh mushrooms (preferably champignon or pleurotus), sour cream, fresh dill, fresh parsley, salt, pepper, puff pastry sheets, one egg for brushing, and sesame seeds for an extra crunch. In a deep frying pan, start by sautéing the finely chopped onion in a little olive oil over medium heat. Let the onion sauté for 2-3 minutes until it becomes translucent and releases its pleasant aroma. Then, add the crushed or finely chopped garlic, mixing well to avoid burning it. The garlic will add a flavor note that will perfectly complement the mushrooms that follow. Now add the sliced mushrooms, stirring constantly. Sprinkle salt and pepper to taste. It is important to let the mushrooms sauté until the water they release evaporates completely. This step is essential to obtain a consistent filling that will not wet the puff pastry sheet. After the water has evaporated, reduce the heat and add the sour cream, mixing well to combine the flavors. Let the sauce reduce a little, then add the finely chopped dill and parsley. These fresh herbs will bring an extra freshness to the dish. Meanwhile, roll out the puff pastry sheets on a clean surface, cutting them into squares of about 20 cm. Fill each square with the mushroom and sour cream mixture, being careful not to overfill. Roll each square tightly, making sure no air remains inside, to achieve compact and tasty rolls. After you have rolled all the squares, brush each roll with a beaten egg to achieve a golden and appetizing crust when baked. Sprinkle sesame seeds on top for a more attractive appearance and a crunchy taste. Cut the rolls into slices of about 2 cm, thus obtaining perfectly sized portions. Place the rolls on a baking tray lined with parchment paper and bake them in the preheated oven at medium heat, on the top rack, to avoid burning. Let them bake for 20-25 minutes until they become golden and puffed up. These mushroom rolls are ideal as an appetizer or snack, being easy to serve and extremely flavorful. Enjoy your meal!
