Delicious at Bran-Predelut: A Culinary Adventure to Remember From July 15-17, 2015, our beloved group, Gustoasele, held its seventh meeting in a dream location - Bran-Predelut. After six years of gatherings in Alba Iulia, we wanted a change of scenery, and Bran welcomed us with open arms, offering not only its natural beauty but also unforgettable moments spent with dear friends. Preparation time: 15 minutes Baking time: 30 minutes Total time: 45 minutes Number of servings: 8 Ingredients needed for a delicious recipe of cabbage or sheep cheese pies: - 500 g of flour - 1 packet of fresh yeast (or 7 g of dry yeast) - 250 ml of lukewarm water - 1 teaspoon of sugar - 1/2 teaspoon of salt - 100 ml of sunflower oil - 1 small cabbage (or 300 g of sheep cheese) - 200 g of telemea cheese - 1 bunch of fresh dill - 1 egg (for brushing) The story of the recipe: Cabbage or cheese pies have a long history in Romanian culinary tradition, often prepared for various holidays or family gatherings. These delicacies are not only hearty but also versatile, being able to be filled with various ingredients, depending on preferences. At our meeting, these pies were a true delight, accompanied by a good palinca brought from Simleu. Step by step to achieve perfect pies: 1. Preparing the dough: In a large bowl, dissolve the yeast and sugar in lukewarm water. Let the mixture sit for 10 minutes until it becomes frothy. 2. Adding dry ingredients: In another bowl, mix the flour with the salt. Gradually add the yeast mixture and oil, kneading the dough well. If necessary, you can add a little water to make it softer and more elastic. 3. Fermenting the dough: Cover the dough with a clean towel and let it rise in a warm place for about 30 minutes, or until it doubles in size. 4. Preparing the filling: Meanwhile, finely chop the cabbage and sauté it in a pan with a little oil until it becomes soft. If you choose cheese, mix the sheep cheese with the crumbled telemea cheese and chopped dill. 5. Forming the pies: After the dough has risen, divide it into 8 equal pieces. Roll out each piece on a floured surface, fill with the cabbage or cheese mixture, and fold the dough to form the pies. 6. Baking: Place the pies on a baking tray lined with parchment paper. Brush them with beaten egg for a golden and beautiful crust. Bake in a preheated oven at 180°C for 30 minutes, or until golden brown. 7. Serving: Serve the pies warm, alongside a fresh salad or as an appetizer. They can be accompanied by a glass of palinca or a dry white wine, which will further enhance their flavors.
