Earl Grey oatmeal

Earl Grey oatmeal simmers in tea-infused milk and thickens with chia, honey and vanilla. It stays creamy, with a subtle bergamot flavor, while the berries and banana add soft bites; honeycomb and flaxseeds change the texture on top. I used frozen berries, and I break the honeycomb over the top rather than mixing it into the oats. Prep: 2 minutes. Cook: 7 minutes. Rest: 10 minutes. Total: 19 minutes. Servings: 1. About 610 kcal and 20 g protein per serving.
Ingredients
- 120 ml milk
- 1 Earl Grey black tea bag
- 75 g rolled oats
- 1/8 teaspoon salt
- 1 tablespoon honey
- 1 tablespoon chia seeds
- 1/2 teaspoon vanilla extract
To serve
- 50 g berries
- 1/2 banana (60 g)
- 10 g honeycomb
- 1 teaspoon flaxseeds (3 g)
Preparation
1. Heat 120 ml milk in a small saucepan for about 2 minutes, until small bubbles form around the edge. Take the pan off the heat, add the tea bag, cover and leave to steep for 10 minutes. 2. Remove the tea bag and put the pan back on the heat. Bring the milk to a boil in one minute, then add 75 g rolled oats and 1/8 teaspoon salt. Cook for 4 minutes, stirring often, until the oats thicken and turn creamy. 3. Transfer the oats to a bowl and stir in the honey, chia seeds and vanilla extract. Top with the berries, banana, honeycomb and flaxseeds.
Notes
Quick oats soften faster; larger flakes may need another minute and a tablespoon of milk if the mixture gets too thick. If the tea bag stays in the milk longer, the bergamot can leave a bitter note. The texture is close to regular porridge, but the chia thickens it further as the bowl sits. For a dairy-free version, replace the milk with 120 ml oat drink; regular milk contains dairy. Frozen berries will color the oats if stirred in, so leave them on top until serving. A spoonful of plain yogurt on the side makes a good breakfast addition. The bowl keeps covered in the fridge for up to 3 days; add the fruit when serving.
Frequently asked questions
Can steel-cut oats be used instead of rolled oats?
Yes, but they need about 25 minutes and 300 ml milk for 75 g; steep the tea separately.
Can I use loose-leaf Earl Grey tea?
Yes, put 2 g of leaves in an infuser and strain the milk after steeping.
What can I use instead of banana?
Use 75 g diced apple and add it raw on top.
