Dukan cinnamon cookies

Dukan cinnamon cookies get their compact dough from oat bran, then bake for 20 minutes until lightly browned. The little balls have orange zest and cinnamon in the dough. I prefer finely milled oat bran, so the dough binds without any hard bits. Prep: 10 minutes. Cook: 20 minutes. Rest: 10 minutes. Total time: 40 minutes. Servings: 4. About 120 kcal and 8 g protein per serving.
Ingredients
- 3 eggs
- 14 tablespoons oat bran
- 2 tablespoons xylitol sweetener
- 1 tablespoon grated orange zest
- 1 tablespoon ground cinnamon
Preparation
1. Put the oat bran, eggs, xylitol, orange zest and cinnamon in a bowl. Mix until you have a compact dough. 2. With clean, slightly damp hands, shape walnut-sized balls and place them on a baking tray lined with parchment paper. 3. Bake the cookies in an oven preheated to 180°C for 20 minutes, until they start to brown at the edges. Leave them to cool for 10 minutes.
Notes
I serve them with unsweetened tea while the orange zest still comes through. Once cooled, keep them in a sealed container in the fridge for up to 3 days. Finely ground oat bran gives a more even texture; coarser bran is more noticeable and makes the dough rougher. Grate only the colored part of the orange peel, since the white layer can make them bitter. Large balls take longer to bake in the center, so make them a similar size, about as big as a walnut. I don’t rush to take them off the paper while they’re hot, since they can break before they cool. Lemon zest can replace the orange zest; use a tablespoon as well and grate only the yellow part. They contain eggs, so they’re not suitable for people who avoid them.
Frequently asked questions
Can I replace the xylitol with erythritol?
Yes, use 2 tablespoons of granulated erythritol; if it’s very coarse, grind it a little before mixing it in.
Can I use ginger instead of cinnamon?
Yes, try 1/2 tablespoon of ground ginger instead of the cinnamon for a spicier flavor.
Can I bake the cookies without parchment paper?
Yes, a silicone mat works instead of the paper; shape the balls to about 3 cm so they bake evenly.
