Romanian ciulama with chicken and mushrooms

Romanian ciulama with chicken and mushrooms turns out well when the onion simmers until soft and the wings cook covered. The sauce stays creamy, with mushrooms, garlic and dill. I choose wings that are close in size so they cook at the same time. Prep: 15 minutes. Cook: 57 minutes. Rest: 15 minutes. Total time: 87 minutes. Serves: 4. Ingredients
For the wings
- 10 chicken wings
- 3 tablespoons oil
- 1 bay leaf
- 3 garlic cloves
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- juice of 1/3 lemon
For the ciulama
- 1 large onion (200 g)
- 280 g cooked sliced mushrooms
- drained
- 1 tablespoon oil
- 150 ml water
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 bay leaf
- 1 teaspoon homemade Vegeta seasoning
- 4 garlic cloves
- 5 heaped tablespoons sour cream
- 25% fat
- 15 g dill
Preparation
1. Take the sour cream out of the fridge 15 minutes before using it. Pat the wings dry with paper towels. Heat 3 tablespoons oil in a deep pan, add the wings, 1 bay leaf, 3 chopped garlic cloves, the lemon juice, 1 teaspoon salt and 1/4 teaspoon pepper. Cover and cook for 25 minutes, until cooked through. 2. Heat 1 tablespoon oil in a cast-iron pot. Add the julienned onion and cook for 3 minutes, stirring, until it starts to soften. 3. Add the drained mushrooms to the onion and sauté for 7 minutes, stirring. Add 150 ml water, 1 teaspoon salt, 1/4 teaspoon pepper, 1 bay leaf and 1 teaspoon homemade Vegeta seasoning. Simmer over low heat for 20 minutes, until the onion is very soft; after 15 minutes, add the 4 chopped garlic cloves. 4. Stir the sour cream with a few spoonfuls of hot sauce, then pour it into the pot. Let the ciulama simmer gently for another 2 minutes and sprinkle with dill. Turn off the heat.
Notes
Mery was the inspiration for this combination; drain the mushrooms from the jar well, and if they are salted, give them a quick rinse. Wings that are close in size cook more evenly, and very large ones may need a few extra minutes covered. I start about an hour before the meal so I can let the onion simmer without rushing. The ciulama keeps in the fridge for up to 3 days and should be reheated gently, with a little water if it has thickened. For a lactose-free version, use lactose-free sour cream with 25% fat; the dish contains dairy. Serve it with polenta.
Frequently asked questions
Why is the sauce too thin?
Let it simmer uncovered for another 4 minutes over low heat, stirring once halfway through.
Can I use fresh mushrooms instead of the ones from a jar?
Yes, use 300 g sliced fresh mushrooms and sauté them for 10 minutes, until the liquid they release has evaporated.
Can I replace the wings with chicken thighs?
Yes, use 700 g bone-in thighs and cook them covered for about 35 minutes, until the juices running from the meat are clear.
How can I check whether the wings are cooked through near the bone?
Measure the temperature in the thickest part without touching the bone; it should reach 74°C.
