Romanian chicken, cabbage and zucchini ciorbă

Romanian chicken, cabbage and zucchini ciorbă is a Romanian soup where the zucchini goes in near the end and keeps its thick slices in the clear broth. The breast cooks whole, then is cut into pieces; the cabbage and carrots make it more substantial than a simple chicken soup. I choose a breast of fairly even thickness so it cooks evenly. Prep: 20 minutes. Cook: 53 minutes. Total time: 73 minutes. Serves: 4. Approximately 210 kcal and 16 g protein per serving.
Ingredients
- 1/2 chicken breast (250 g)
- 1500 ml water
- 1 tablespoon Vegeta seasoning
- 15 ml olive oil
- 1 medium onion (150 g)
- 2 carrots (120 g)
- 100 g celery (optional)
- 100 g parsnip (optional)
- 1 small cabbage (700 g)
- 2 zucchini (400 g)
- 240 ml tomato passata
- 1/2 teaspoon white pepper
- 1 teaspoon dried lovage
- 15 g fresh parsley
Preparation
1. Put the whole chicken breast in 1500 ml water with 1 tablespoon Vegeta seasoning. Skim off the foam as it rises and simmer for 20 minutes, until the thickest part is no longer pink in the center. 2. Cut the cabbage into strips and put it in a colander. Cut the carrots lengthwise into quarters, chop the onion and, if using, peel and finely chop the celery and parsnip. Sauté everything in 15 ml olive oil for 8 minutes, until the onion softens. 3. Add the sautéed vegetables and cabbage to the pot with the chicken. Simmer for 15 minutes, until the cabbage starts to soften. 4. Peel and seed the zucchini, then cut it into thicker slices. Add it to the pot and cook for another 8 minutes, until softened but still holding its shape. 5. Take out the breast, cut it into pieces and return it to the pot. Add the tomato passata, white pepper and dried lovage; simmer for 2 minutes, then turn off the heat and add the chopped parsley.
Notes
Keeps in the refrigerator for up to 3 days in a covered container. For the variation in the source, you can also sauté 100 g each of celery and parsnip with the other vegetables. Serve with plain bread, good for dipping in the broth. I adjust the amount to the time of the meal, as I would with an ordinary chicken soup, only the cabbage makes it more substantial. Small zucchini soften faster than large ones, so check them after 5 minutes; if the Vegeta is salty, taste the broth before adding any more salt.
Frequently asked questions
Can I use chicken thighs instead of breast?
Yes. Use 500 g boneless chicken thighs and simmer them for 25 minutes before adding the vegetables.
Can I leave the skin on the zucchini?
Yes, wash them well and cut them into slices about 1 cm thick; the skin stays on the slices while they cook.
What should I do if the cabbage is still firm?
Let it cook for another 6-8 minutes before adding the zucchini, then continue with the next step.
