Green bean and dried lentil soup

Green bean and dried lentil soup is usually served hot for lunch, with the vegetables soft and the lentils still whole. The broth stays light, while the tomatoes and tomato paste give it a tangy flavor, with dill and parsley added at the end. I keep an eye on the lentils as they finish cooking and let them keep their shape. Prep: 20 minutes. Cook: 67 minutes. Rest: 0 minutes. Total time: 87 minutes. Serves: 8. Ingredients
- 3-4 tablespoons oil
- 1 large onion (200 g)
- 3 garlic cloves
- 2 bell peppers
- 1/2 hot pepper
- 1 large carrot (100 g)
- 1/4 small cabbage (250 g)
- 250 g dried lentils
- 500 g green beans
- 3 medium tomatoes (360 g)
- 4000 ml cold water
- 1 teaspoon salt
- 1/2 teaspoon peppercorns
- 1 bay leaf
- 1/8 teaspoon dried thyme
- 1/2 teaspoon ground pepper
- 70 g tomato paste
- 15 g dill
- 15 g parsley
Preparation
1. Clean and wash the vegetables. Chop the onion, slice the garlic, cut the peppers into strips and finely chop the hot pepper. Slice or dice the carrot, chop the cabbage and tomatoes, and break the green beans into pieces. Rinse the lentils in 2-3 changes of water and chop the dill and parsley. 2. Heat 3-4 tablespoons of oil in a pot. Add the onion and garlic and sauté for 3 minutes, until the onion softens. 3. Add the bell pepper and hot pepper. Sauté for another 3 minutes, until the pepper starts to soften. 4. Add the carrot, cabbage, lentils, green beans and tomatoes. Pour in 4000 ml cold water and add the salt, peppercorns, bay leaf, thyme and ground pepper. Simmer over medium heat for 60 minutes, until the lentils and green beans are soft. 5. Stir in the tomato paste, dill and parsley. Simmer for 1 more minute, then taste the soup and turn off the heat.
Notes
I serve it with bread while the soup is hot. Choose firm pods with no soft spots; very thick ones may need longer to cook than thin ones. Frozen green beans can replace the same amount; add them straight to the pot and check whether they have softened after 45 minutes. If the lentils are old, they may still be firm after an hour of cooking. Fresh tomatoes can be replaced with 350 g canned chopped tomatoes. The soup keeps in the fridge for up to 3 days; the lentils absorb more of the broth, so add a little water when reheating a serving.
Frequently asked questions
Why might the lentils stay firm?
Older lentils may need another 10-15 minutes of cooking. If the broth reduces in the meantime, top it up with hot water.
Can I use red lentils instead of dried lentils?
Yes, use the same 250 g and add them during the last 15 minutes of cooking; they will break down more easily than green or brown lentils.
How much hot pepper should I use if I want the soup less spicy?
Use a quarter of a hot pepper instead of half. If it still tastes too hot when you try it, don't add any more hot pepper.
