Moldovan Martyrs (saints)

To prepare a traditional delicacy, we will start by gathering all the necessary ingredients for the dough. We will need 500 grams of flour, 250 milliliters of lukewarm milk, 50 grams of fresh yeast, 100 grams of sugar or, for a slightly more aromatic taste, honey, 100 milliliters of oil, one egg, and a pinch of salt. Each of these ingredients plays an essential role in achieving the perfect dough. The first step is to activate the yeast. In a small bowl, mix the yeast with a portion of the lukewarm milk and a teaspoon of sugar, letting the mixture sit for 10-15 minutes until a foam forms on top. This process will ensure that the yeast is active and will help the dough rise beautifully. In a larger bowl, combine the flour, the remaining sugar, salt, egg, and oil, mixing well. Then add the yeast and milk mixture, but not all the milk at once. It is important to add the milk gradually to control the consistency of the dough. Knead the dough for about 10 minutes until it becomes elastic and smooth. Once you achieve the desired texture, cover the bowl with a clean towel and let the dough rise in a warm place until it doubles in volume. This process can take between 1 and 2 hours, depending on the ambient temperature. After the dough has risen, divide it into equal pieces and form ropes, which you braid, giving them the characteristic shape of the pretzels. These pretzels symbolize tradition and are a true visual feast. Place the formed pretzels on a baking tray lined with parchment paper and let them rise for another 30 minutes. During this time, preheat the oven to 180 degrees Celsius. Once they have puffed up again, brush the pretzels with a beaten egg to achieve a golden and appetizing crust, and bake them at moderate heat until they take on a brown hue, which takes about 25-30 minutes. In the meantime, we prepare the syrup. In a saucepan, boil 300 milliliters of water with 200 grams of sugar and a vanilla essence until the sugar dissolves, obtaining a sweet and fragrant syrup. After the pretzels have cooled slightly, dip them in the syrup, allowing them to absorb the flavor and sweetness. Then, place them on a nice platter and sprinkle with ground walnuts and coconut if you wish to add an exotic touch. This is a perfect recipe to bring joy and flavor to your loved ones, and if you prepare a double portion, you will surely impress everyone. Enjoy every bite of this traditional delicacy!
