Then, as you continue to mix, gradually add 4 tablespoons of water. This step is essential, as the water will help achieve a softer and fluffier texture for the base. In another bowl, beat the egg whites until a firm and glossy foam forms. It is important that the egg whites are properly beaten, as they will give the base an airy structure. Once you have obtained the egg white foam, carefully fold it into the yolk mixture using a large spatula, with slow and gentle movements to avoid breaking the air bubbles. Now, gradually add 12 tablespoons of flour, continuing to mix carefully. The final composition should be smooth but retain that light texture. Prepare a tray lined with parchment paper and pour the mixture into it. Preheat the oven to 180 degrees Celsius and bake the base for about 25 minutes. Check if it is ready by inserting a toothpick in the center; if it comes out clean, the base is perfectly baked. After it has cooled, cut the base into two halves, leaving the bottom part slightly thicker. Tear pieces from the top half and prepare a syrup from 250 ml of water and a few tablespoons of sugar, which you will flavor with rum essence or rum, if the dessert is intended for adults. Let the syrup cool slightly, then soak the torn pieces of base. With the remaining syrup, soak the whole remaining base, thoroughly soaking it to give it a rich flavor. For the cream, beat 200 g of butter with 150 g of powdered sugar until it becomes fluffy. Add 200 g of ground walnuts and, if desired, a little coffee liqueur for an intense taste. Mix the cream well with the soaked pieces of base. Place the walnut cream over the whole soaked base, smoothing it with a spatula. Finally, add your favorite jam, choosing between apricot jam and sour cherry jam, to complete this delight with a note of freshness.
