Cold Cabbage Garnish

These will not only provide a contrast of colors but also a variety of flavors and textures. In a large pan, we heat a little olive oil over medium heat. We add both types of finely sliced cabbage, stirring constantly. It is important to sauté the cabbage just until it becomes slightly soft, so it retains its crunchiness and freshness. After about 5-7 minutes, we add ½ of the amount of raisins, which will soften slightly and add a sweet note to the dish. Once the cabbage is cooked, we transfer the mixture to a bowl and let it cool to room temperature. Meanwhile, we prepare the marinade. In a small bowl, we combine balsamic vinegar, salt, and sugar, mixing well with a spatula or whisk until the salt and sugar are completely dissolved. This marinade will provide a balanced taste, with a hint of acidity that will perfectly contrast with the sweetness of the raisins. Once combined, we add the olive oil and cumin seeds, mixing again to achieve a smooth emulsion. Once the cabbage has cooled, we pour the marinade over it, ensuring that each piece of vegetable is evenly coated. We also add the remaining raisins, which, once marinated, will become even more flavorful. We carefully mix everything so that the ingredients are well integrated. We cover the bowl with plastic wrap and refrigerate it. It is recommended to let the salad marinate for at least two hours, but the longer, the better, as the flavors will intensify. After the marinating time has passed, we can serve the salad plain, as a side dish alongside main courses, or as a fresh appetizer.
