Delicious green olive salad brings together tomatoes, lettuce leaves, green onions and pimento-stuffed olives in a fresh mix. Ingredients
- 2 tomatoes
- 1 head of lettuce
- 1 bunch of green onions
- 100 g green olives stuffed with pimentos
- 1 teaspoon salt
- 2 tablespoons oil
Preparation
1. Wash the tomatoes, lettuce and green onions, then dry them. Drain the olives. 2. I diced the tomatoes, cut the lettuce into thin strips, the green onions into bite-size pieces and the olives into rounds, then seasoned everything with 1 teaspoon of salt and 2 tablespoons of oil.
Notes
You can use 100 g plain green olives instead of the stuffed ones; the salad will still be suitable for fasting. Cut the vegetables close to serving time, since the salt draws juice from the tomatoes and softens the leaves. If you want to prepare everything ahead, keep the tomatoes, leaves and green onions in separate containers in the fridge, then mix them together at the table. Choose ripe tomatoes that are still firm to the touch; very soft ones get crushed when you toss the strips. The leaves should be drained and dried well after washing, otherwise water will collect at the bottom of the bowl. When the green onions taste too sharp, use more of the green part and cut the white part finer. Stuffed olives can be salty, so taste before adding the whole teaspoon of salt. You can serve it with baked potatoes or a slice of bread.
