Homemade bread with potatoes

Choose medium-sized potatoes suitable for boiling. Place them in a large pot, cover them with cold water, adding a teaspoon of salt. Bring the water to a boil and let them cook until tender, about 20-30 minutes, depending on the size of the potatoes. Once cooked, remove them from the water, let them cool slightly, then peel and mash them well. In another bowl, start preparing the dough. Add the flour to a large bowl. In a separate container, dissolve the yeast in warm water, adding a pinch of salt. This step is essential for activating the yeast. After the yeast has dissolved, pour the mixture over the flour and mix gently. At this stage, it is recommended to prepare a starter that will help develop the flavors. Let the mixture rise for 20-30 minutes, covering the bowl with a clean towel. Once the starter has risen, add the mashed potatoes, salt, and warm water until you obtain a homogeneous dough. It is important that it is neither too hard nor too soft. Knead the dough for 10-15 minutes until it becomes elastic and has a fine texture. Now, let it rise in a warm place, covered, for about 1-2 hours, or until it doubles in volume. When the dough is ready, sprinkle some flour on the work surface and transfer the dough. Shape it gently, without pressing too hard. Prepare a round baking tray or pot, lining it with aluminum foil. Place a large leaf of cabbage on the bottom, greased with a little oil to prevent sticking. Transfer the dough to the tray and let it rise for another half hour. During this time, preheat the oven to a high temperature. When the dough has risen again, place the tray in the oven, putting a dish with cold water underneath. This will create steam, essential for a perfect crust. Do not open the oven for about 1 hour and 10 minutes. After 15 minutes at high heat, reduce the temperature by half and continue baking. Check the bread with a toothpick to ensure it is well baked. If necessary, leave it in the oven for a few more minutes. Once the bread is baked, remove it from the oven and wrap it in a towel, covering it with a bag to retain moisture. Let it cool this way. Potato bread can be customized with various seeds, and adding sesame seeds on top provides an extra flavor.
