Homemade Bounty bars

Homemade Bounty bars are bars with a compact coconut center covered in chocolate. The butter and sugar mixture binds the flakes, and once chilled, the center cuts cleanly and stays slightly soft beneath the firm chocolate coating; the pink flakes show up as little flecks when you cut into them. I serve them cold, with coffee. Prep: 20 minutes. Cook: 8 minutes. Rest: 95 minutes. Total: 123 minutes. Servings: 12. Approximately 290 kcal and 3 g protein per serving.
Ingredients
- 200 g whipping cream
- 85 g sugar
- 50 g butter
- 2 sachets vanilla sugar
- 170 g white coconut flakes
- 30 g pink coconut flakes
- 150 g dark or milk chocolate
Preparation
1. Put the whipping cream, sugar and butter in a saucepan. Boil for 3 minutes, until the sugar melts. 2. Take the pan off the heat and stir in the vanilla sugar and the white and pink coconut flakes. Leave the mixture to cool for 20 minutes. 3. Lay aluminum foil on the work surface and spread the mixture into a square 1-2 cm thick. Cover it with plastic wrap and freeze for 45 minutes, until firm. 4. Cut the mixture into bars. Melt the chocolate in a double boiler for 5 minutes, stirring, then dip each bar in it. 5. Chill the bars for 30 minutes, until the chocolate sets.
Notes
Keep the bars in a sealed container in the fridge for up to 3 days, with baking paper between the layers. Fine flakes bind into a more compact center than large ones; if your coconut has long flakes, chop it before mixing. If the base still gives when you lift it, leave it in the freezer longer, until firm, since the fat content of whipping cream can vary from one product to another. I like the pink fleck showing among the white flakes when I cut into a bar, so I don't mix the coconut too thoroughly. Milk chocolate can replace dark chocolate in the same amount for a sweeter coating. The bars contain dairy and coconut. In shape and coating, they resemble ordinary chocolate bars, except the center is coarse with coconut. I put them on a plate cold, with coffee.
Frequently asked questions
Why do the bars crumble when I cut them?
Leave the base in the freezer for another 10 minutes, then try cutting it again.
Can I use only white coconut?
Yes, replace the 30 g of pink coconut with 30 g of white coconut.
How do I stop the chocolate from getting too hot?
Keep it below 45°C while melting it in a double boiler, stirring it often.
