Berry Cake

To prepare a delicious mascarpone and berry cake, we start by ensuring that all ingredients are at room temperature. Thus, the eggs are beaten together with the sugar until the mixture becomes frothy and increases considerably in volume. This step is essential, as the air incorporated at this stage will give the cake a fluffy and airy texture. Once this is done, we add the milk, which will bring extra moisture, and mascarpone, a creamy and rich ingredient, continuing to mix the composition with an electric mixer on medium speed. After obtaining a homogeneous mixture, it is time to focus on the dry ingredients. We sift the flour together with the baking powder to avoid lumps and ensure an even distribution of the leavening agent. We add the flour mixture to the egg, milk, and mascarpone composition, mixing with a spatula using gentle up-and-down motions so as not to deflate the air in the mixture. We now prepare the baking pan, 28 cm in diameter, with a hole in the middle. It is important to grease the pan with butter or oil and to line it with flour to prevent the cake from sticking. After doing this, we carefully pour the composition into the pan, ensuring it is evenly distributed. On top of this, we add the frozen berries, which can be cherries, raspberries, or any other preferred fruit. These will not only add a wonderful flavor but will also provide a nice color contrast. If desired, you can dust the fruits with a little flour to prevent them from sinking to the bottom of the cake during baking. However, this step is optional. Once we have added the fruits, we place the pan in the preheated oven at 180 degrees Celsius. We bake the cake for about 30 minutes or until it turns golden and passes the toothpick test - it should come out clean when inserted into the center of the cake. After baking, we let the cake cool completely in the pan, then carefully transfer it to a cake stand. Finally, we dust the cake with powdered sugar to give it an elegant appearance and enhance the sweetness. The cake can be served plain or alongside a fruit sauce or cream for a perfect culinary experience. Enjoy each slice of this delicious treat, ideal for any occasion!
