To prepare these delicious nut cookies, start by ensuring that all the ingredients are at room temperature. This will help achieve a fine and homogeneous texture of the dough. In a large bowl, place the softened butter and powdered sugar, keeping half of the amount for later. Use an electric mixer or a spatula to cream the butter together with the powdered sugar and vanilla (or vanillin) until the mixture becomes fluffy and airy. This process is essential for incorporating air into the dough, resulting in fluffier cookies. Once the butter and sugar mixture is ready, start adding the sifted flour, a portion at a time, gently mixing with a spatula or wooden spoon after each addition. It is important not to overmix, as this could develop the gluten in the flour, leading to tougher cookies. Finally, add the ground or chopped nuts, gently mixing to incorporate them evenly into the dough. While you handle the dough, prepare two trays by lining them with baking paper or parchment so that the cookies do not stick.
