Oven-Baked Pork Ribs with Bombay Potatoes Preparation time: 20 minutes Baking time: 1 hour and 30 minutes Total time: 1 hour and 50 minutes Servings: 4 Discover a simple yet spectacular recipe for oven-baked pork ribs with Bombay potatoes, a dish that will delight the taste buds of the whole family. This combination of juicy meat and flavorful potatoes is perfect for a weekend dinner or a special occasion. Ingredients: - 1 kg pork ribs - 1 kg potatoes (ideally new potatoes or red potatoes) - 2 hot peppers (optional, depending on spice preference) - 5-6 garlic cloves - 4 tablespoons olive oil - 2 tablespoons sweet paprika (or smoked for a more intense flavor) - 1 teaspoon dried thyme - Salt and pepper to taste - 1 lemon (for a touch of freshness) Preparation: 1. Preheat the oven to 180°C. While the oven is heating, prepare the ingredients. 2. In a large bowl, mix the olive oil, paprika, thyme, salt, and pepper. Add the pork ribs and rub them well with the marinade. Let them rest for 15 minutes to absorb the flavors. 3. Meanwhile, peel the potatoes and cut them in half or quarters, depending on their size. Bombay potatoes are characterized by a crispy exterior and soft interior, so do not cut them too small. 4. In a baking dish, place the pork ribs, being careful not to overlap them. Distribute the potatoes around them. 5. Slice the hot peppers into thin strips and sprinkle them over the potatoes and ribs. Add the whole garlic cloves to enrich the aroma of the dish. 6. Squeeze the lemon juice all over and add a few lemon slices for extra freshness. 7. Cover the dish with aluminum foil for the first half of the baking, then remove it to allow the ribs to become golden and crispy. 8. Bake for 1 hour and 30 minutes, turning the ribs and stirring the potatoes halfway through. Check if the meat is well cooked and if the potatoes are soft but crispy. Serving suggestions: Serve the pork ribs with Bombay potatoes directly from the dish, garnished with freshly chopped parsley for a colorful appearance. A fresh green salad or a yogurt sauce with mint would perfectly complement this dish. Variations: For a more exotic version, you can add spices like curry or coriander. Experiment with seasonal vegetables such as carrots or zucchini for an even more diverse meal. Useful tips: For optimal results, choose ribs with a layer of fat, which will remain juicy during baking. Also, feel free to adjust the level of spiciness according to your preferences and those of your loved ones. This recipe for oven-baked pork ribs with Bombay potatoes is not only a delicious dish but also a perfect way to bring the family together around the table. Enjoy your meal!
Preparation
In a food processor, mix 3 cloves of garlic and 3 dried chili peppers (he also mentioned 3 fresh chili peppers, but I didn't have any). Rub the ribs with the mixture and let them sit in the fridge for an hour, then place them spaced out on a baking tray. Bake at 180°C for an hour, then drizzle with orange juice and 3 tablespoons of honey, and return to the oven until they are nicely browned. Meanwhile, I boiled the potatoes cut into large pieces. I prepared their seasoning by adding a teaspoon of black onion seeds (which I believe are called nigella in English, and I really like them), one of garam masala, and one of Indian cumin in a little oil. I sautéed them briefly, then added a piece of grated ginger, a bit of butter, and a little curry. When the potatoes are done boiling, drain them and immediately toss them in the sauce and place them next to the ribs.
