Baked mackerel with vegetables

Fish - Baked mackerel with vegetables by Virginia K. - Recipia

Baked mackerel with vegetables brings together browned fish rolls on a bed of gently cooked vegetables, with the sauce reducing around them. I look for fillets of similar thickness; I usually eat mackerel grilled or fried, but with roasted vegetables I like a little sauce to remain in the pan, still fluid, not dry. Preparation: 20 minutes. Cooking: 39 minutes. Rest: 0 minutes. Total time: 59 minutes. Serves: 4. Approximately 560 kcal and 29 g protein per serving.

Ingredients

  • 4 mackerel fillets
  • 2 medium onions (300 g)
  • 2 carrots (150 g)
  • 1 medium zucchini (250 g)
  • 2 large garlic cloves (10 g)
  • 3 tablespoons oil
  • 150 ml water
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon smoked paprika
  • 2 medium tomatoes (300 g)
  • 1 cooked potato (150 g)
  • 1 tablespoon vinegar
  • 10 g fresh dill

Preparation

1. Thinly slice the onion, cut the carrots into rounds and the zucchini into small cubes, then crush the garlic. Heat 2 tablespoons of oil in a pan and sauté the vegetables for 5 minutes, until slightly softened. 2. Pour 150 ml of water over the vegetables, add the bay leaf and simmer for 10 minutes. The liquid should bubble gently, while the vegetables keep their shape. 3. Cut each mackerel fillet in half across the width, then cut each piece into three strips lengthwise. Sprinkle the fish with 1/2 teaspoon of salt, 1/4 teaspoon of pepper and the smoked paprika, roll up the strips and secure each roll with a toothpick. Heat 1 tablespoon of oil in a pan and brown the rolls for about 4 minutes, turning them on all sides. 4. Halve the tomatoes and remove the seeded core, then cut the flesh into strips. Add the tomatoes, cooked potato cut into pieces, vinegar, 1/2 teaspoon of salt and 1/4 teaspoon of pepper to the nearly cooked vegetables. Stir and transfer everything to an ovenproof dish; sprinkle with the chopped dill and arrange the fish rolls on top. 5. Bake at 200 °C for 20 minutes, until the sauce has reduced and the fish is cooked.

Notes

You can swap the mackerel for trout fillets of a similar thickness; very thin ones cook faster, so check them before taking the dish out of the oven. I usually get started about an hour before the meal, especially if I also need to boil the potato. Keep any leftovers in a sealed container in the fridge for up to 3 days; when reheating, add a tablespoon of water if the sauce has reduced too much. Serve it with mămăligă, Romanian cornmeal porridge. Choose firm fillets with a clean smell and a similar thickness, so the thinnest strips don't dry out before the thicker ones are cooked. Very juicy tomatoes can release a lot of liquid, so remove the seeded core thoroughly, and if the zucchini is large and has a spongy center, remove the seedy part. The cooked potato should hold its shape when cut; if it's too soft, stir the vegetables gently so the pieces don't break apart.

Frequently asked questions

Can I use frozen mackerel?

Yes, let it thaw overnight in the fridge and pat the fillets dry with paper towel before cutting them.

What should I do if the rolls come undone?

Secure each roll with two toothpicks, one at each end of the strip.

Can I use raw potato?

Yes, but boil the pieces separately for about 12 minutes, until a fork slips into them easily.

Why is the sauce watery?

Leave the dish uncovered in the oven for another 5 minutes at 200 °C, so some of the liquid can evaporate.

Can I use cherry tomatoes too?

Yes, use 250 g, halved; there's no need to remove the core.
