Quick skillet pizza

Pasta/Pizza - Quick skillet pizza by Virginia F. - Recipia

Quick skillet pizza has a crust made with yogurt, egg and flour that cooks in 10-12 minutes. I found this version on my friend Luminița Sunar’s blog, and the crust can stay fluffy or brown more. I prefer to let the bottom develop a thin crust without the whole base getting hard. Prep: 8 minutes. Cook: 18 minutes. Total time: 26 minutes. Servings: 2. About 650 kcal and 30 g of protein per serving.

Ingredients

  • 1 egg
  • 3 tablespoons yogurt
  • 1 1/2 tablespoons oil
  • 8 tablespoons flour
  • 1/2 packet baking powder (5 g)
  • 1/2 teaspoon salt
  • 500 ml water
  • 50 g bacon
  • 5 g butter
  • 2 tablespoons ketchup
  • 50 g ham
  • 50 g mushrooms
  • 50 g frozen vegetables
  • 1/2 teaspoon oregano or basil
  • 100 g cheese

Preparation

1. Boil the frozen vegetables in 500 ml water for 3 minutes, then drain them well. 2. Dice the bacon and fry it for 2 minutes, until it starts to brown. Use a small frying pan, then wipe it and set it aside for the crust. 3. Grease the bottom of a 30 cm nonstick frying pan with butter. 4. Mix the egg with the yogurt and oil. In a separate bowl, combine the flour with the salt and baking powder, then gradually mix it in until you have a thick batter that falls slowly off the whisk. Stop as soon as it is smooth. 5. Spread the batter in the greased pan. Top with the ketchup, sliced ham, sliced mushrooms, bacon and drained vegetables. Sprinkle with oregano or basil to taste, then grate the cheese over the top. 6. Cover the pan and cook over the lowest heat, on the largest burner, for 10-12 minutes. Don’t lift the lid during the first 10 minutes, then check whether the crust is cooked underneath. Take the pizza out when the bottom is browned as much as you like and serve it hot.

Notes

The pizza keeps in the fridge for up to 3 days in a closed container, but the crust softens. I cut it into slices and serve it with green salad. Instead of the ham and bacon, you can use 80 g corn and chopped peppers, or replace the cheese with 100 g mozzarella. The crust contains gluten, dairy and egg. A 30 cm nonstick frying pan gives the batter room to spread; in a 24 cm pan, divide the mixture in two and cook it in two batches. Sometimes the bottom browns before the cheese melts, especially in a thin pan, so keep an eye on its color after you lift the lid.

Frequently asked questions

How can I make the crust crispier?

After the 10-12 minutes of cooking, leave the pizza over the lowest heat for another 1-2 minutes, checking the bottom.

Can I use wholemeal flour?

Yes. Replace no more than 2 tablespoons out of the 8 with wholemeal flour; the batter will be a little denser.

Can I add fresh tomatoes on top?

Yes, use 40 g of tomatoes without seeds and pat them dry with a paper towel before putting them on the crust.
