To prepare a delicious pizza, start by making the starter. In a bowl, mix 90 grams of flour with the yeast and 150 grams of water. It is important to achieve a very soft and sticky dough, so don't worry if it seems too wet. Cover the bowl with plastic wrap or a linen or cotton cloth and let it rise for about an hour. This fermentation process will activate the yeast and help the dough rise beautifully. After the hour of rising has passed, add the remaining flour, water, and salt. It is recommended to oil your hands, especially at the beginning, as the dough will be quite sticky due to the high hydration. Knead the dough well until it becomes elastic and pulls away from your hands. Then, start bringing the edges of the dough towards the center, repeating this process several times. Finally, shape it into a ball and let it rise in the bowl, covered. Allow the dough to rise at room temperature in a secluded spot; usually, in a room with a temperature of about 19°C, the dough will rise for about 4 hours. Once the dough has risen, turn it out onto a floured surface. Using your fingertips, stretch the edges of the dough to flatten it, being careful not to squash the air bubbles created during rising. Gently press with your fingertips over the entire surface of the dough to flatten it evenly. Turn the dough upside down and continue to stretch it, pulling at the edges until you achieve the desired size for the pizza tray. Place the dough on a tray sprinkled with flour or cornmeal to prevent sticking. Cover it and let it rise again while you preheat the oven to maximum temperature. It is essential for the oven to be well heated to achieve a crispy crust. While the oven is heating, prepare the topping. Cut the cheese and steam the broccoli, breaking it into small florets. Don't forget to peel the stalk, cutting it into small pieces to add to the pizza. Once the oven has reached the desired temperature, place the cheese and broccoli on the pizza dough. Bake the pizza at high heat, initially placing the tray at the bottom of the oven for the first 5-7 minutes, then move it to the top for even browning.
