Organic Cookies with Cranberry

Nut and cranberry cookies are an easy-to-make delicacy, perfect for any occasion, whether it's a party, a get-together with friends, or simply a sweet snack during the day. This recipe, which I discovered in the GoodFood magazine in 2011, proves to be not only simple but also very tasty. The first step is to prepare our ingredients. We will need sugar, which we will grind using a grinder, turning it into powdered sugar. This step is essential, as the powdered sugar will integrate much better into the dough, giving the cookies a fine and delicate texture. After obtaining the powdered sugar, we take care of the butter. It should be melted, but not hot, just at room temperature, so that it can be easily mixed. In a large bowl, we will knead the melted butter together with the powdered sugar and vanilla essence, which will add a pleasant aroma to our cookies. It is important to obtain a homogeneous mixture, and kneading with our hands will help melt the butter and incorporate the sugar. Then, we will gradually add the flour, continuing to knead until the dough starts to form. Finally, we add the nuts, which should be chopped into larger pieces to provide a crunchy texture, and the cranberries, which will add a touch of acidity and a pleasant taste contrast. Once we have obtained a homogeneous dough, we can start forming rolls of about 5 cm in diameter. These will be wrapped in cling film and placed in the freezer for 15-20 minutes. If we want to prepare a larger quantity of cookies, we can keep the dough in the freezer for up to 3 months, so we have a delicious dessert on hand whenever we want. After the freezing time has expired, we preheat the oven to 180 degrees Celsius, gas mark 4. Then, we take the rolls out of the freezer and cut them into slices about 1 cm thick. These slices are placed on a baking tray, which we have previously lined with baking paper to prevent sticking. The cookies bake for 15 minutes, until they turn golden and slightly crispy. After baking, it is good to let the cookies cool on the baking tray to set their flavor and texture. These cookies are ideal to be enjoyed with a cup of tea or coffee, and their versatility makes them suitable for any time of the day. Enjoy!
