Low Turnip Food

To prepare a delicious dish from grated turnips, it is essential to carefully attend to each step of the recipe, so that we obtain a savory and aromatic result. We start by cleaning and washing all the necessary ingredients. Choose medium-sized, healthy turnips without spots or damage. After washing them well, we grate them using a grater, obtaining thin strips that will absorb the flavors of the dish. Once we finish grating, we place the turnips in a pot of water to which we have added some vegetables, to give them an extra flavor. We boil the turnips for about 5-7 minutes, so that they become a little softer but do not turn into puree. In the meantime, we take care of the onion. In another pot, we heat the oil and add the finely chopped onion. We want it to become transparent and take on a golden hue, so we sauté it over medium heat. Once the onion is ready, we add the minced garlic and continue to sauté the mixture for another 2-3 minutes, so that the flavors blend perfectly. Once the onion and garlic are cooked, we remove the pot from the heat. The boiled turnips are drained, but we take care to keep the water in which they boiled, as we will use it further to give consistency to the dish. After draining the turnips, we add them over the sautéed onion and garlic. We season the mixture with salt and pepper to taste, and then we put everything back on the heat, adding fresh dill sprigs for an extra flavor. We mix the ingredients well, then we start incorporating the flour, sprinkling it in a rain-like manner to avoid lumps. Gradually, we add the water in which the turnips boiled, being careful not to add all the water at once, but gradually, to control the consistency of the sauce. When we notice that the dish has thickened a little, we stop adding water and let it simmer for five minutes. During this time, we add the chopped fresh dill and remove the sprigs to avoid a fibrous texture. Finally, we add the sour cream, mixing well to obtain a creamy and flavorful sauce. The dish is ready to serve! It can be enjoyed simply, alongside a slice of toasted bread, especially if we are observing a fast, or we can accompany it with meatballs or steak for a more substantial meal. This recipe is not only delicious but also very healthy, considering the benefits of turnips and the fresh ingredients used. Bon appétit!
