Ham and cheese puff pastry sticks are cut into 1.5 cm strips only after the puff pastry has thawed. The ham and cheese go between the sheets, with sesame seeds and chili flakes on top; in the oven, the edges turn golden and the pastry puffs into layers. I use thin slices of ham so they sit in as even a layer as possible. Preparation: 15 minutes. Cooking: 20 minutes. Total time: 35 minutes. Servings: 6. Ingredients

  • 1 package (800 g) Bella puff pastry
  • 1 egg
  • 200 g sliced pork ham
  • 200 g Kaisser cheese slices
  • 10 g sesame seeds
  • 1 g chili flakes

Preparation

1. Thaw the puff pastry and unfold the first sheet on your work surface. Beat the egg and brush some of it over the sheet. 2. Arrange the ham slices on top, then the cheese slices, and cover with the second sheet of puff pastry. 3. Carefully cut into strips about 1.5 cm wide; you’ll get about 11-12 pieces. Transfer them to a baking tray lined with parchment paper. 4. Brush the strips with the remaining beaten egg, sprinkle with the sesame seeds and chili flakes, then bake at 200°C for 20 minutes, until golden.

Notes

I serve them with a green salad; a cold beer goes well with the salty filling. Once they’ve cooled, keep them in a container in the fridge for up to 3 days, though the puff pastry is more tender on the day it’s baked. Thin slices of ham sit more evenly than thick ones, which can lift the top sheet. If the cheese is soft, keep it chilled until you slice it, so it doesn’t break as you arrange it. I put chili flakes on only some of the strips, so there are some without any heat. You can use poppy seeds instead of sesame seeds, in the same quantity. Puff pastry contains gluten, and the egg and cheese contain egg and milk.
