Pancakes with Chocolate Mousse, Nuts, and Caramel

Pancakes are a versatile dish, loved by everyone, whether served for breakfast, as a dessert or as a snack. There are countless variations, but today we will focus on a recipe that combines the classic with refinement: pancakes filled with chocolate mousse and decorated with caramel sauce and crunchy nuts. This recipe is easy to make and will surely impress anyone who tastes them. To start, we prepare the pancakes. In a large bowl, we whisk the eggs well with the sugar and a pinch of salt. This step is essential as it helps achieve a fluffy texture. We then add the oil, milk, and sparkling water, continuously mixing to combine the ingredients. It is important to use a whisk to avoid lumps forming. Gradually, we begin to incorporate the flour, mixing vigorously until we obtain a smooth batter. At this stage, if the batter seems too thick, do not hesitate to add a little milk or sparkling water; conversely, if it is too thin, a little flour will do wonders. Once we achieve the desired consistency, we let the mixture chill for 15 minutes. In a non-stick skillet, we add a splash of oil or, for a healthier option, we can skip it altogether. We pour a ladle of the mixture into the skillet and let it brown on one side for about 1-2 minutes, then flip the pancake and let it cook for a few more moments. It is important to achieve a golden color on both sides. After all the pancakes are cooked (about 18 pieces), we place them on a plate and let them cool. Meanwhile, we focus on the chocolate mousse. We start by whipping the cream with a tablespoon of sugar until it becomes firm and fluffy. Then, we melt the chocolate in a double boiler, being careful not to let it boil. Once melted, we let it cool slightly before incorporating it into the whipped cream. We gently fold with a spatula to keep the air in the cream, and finally, we add the ground nuts, saving a few for decoration. For assembly, we place a heaping tablespoon of mousse on each pancake and carefully roll them up. Finally, we decorate with caramel sauce and sprinkle the remaining nuts on top. These chocolate mousse pancakes are not only delicious but also a true visual delight, perfect for serving on a special occasion or simply to indulge yourself. Enjoy them with pleasure!
