Tomatoes are one of the most versatile and beloved vegetables, and the recipe we propose today is not only delicious but also easy to prepare. We start by washing the tomatoes under a stream of cold water, ensuring they are clean and free of impurities. Then, we cut them in half. If you have small tomatoes, cut them horizontally in two, but if they are larger, we can choose to cut just the top, leaving the base intact for easier filling. Once we have prepared the tomatoes, we use a teaspoon to scoop out the seeds and pulp, being careful not to destroy the shape of the tomato. This will create a small space to add the delicious filling. Now that we have the tomatoes prepared, we move on to making the sauce that will add extra flavor to these delicious vegetables. In a bowl, we combine the canned tuna, along with all its oil, capers, and anchovies. These ingredients will bring an intense and salty flavor to our sauce. We then add a few tablespoons of mayonnaise, which will provide creaminess and a delicious taste. Don’t forget the freshly ground pepper, which will add a touch of spiciness. Using an immersion blender, we blend all the ingredients until we obtain a smooth and homogeneous paste. Finally, we add the finely chopped fresh basil leaves to bring a touch of freshness and aroma. Now that we have the sauce prepared, we fill each half of the tomato with this savory mixture, being careful to fill them well, but without overloading them. These stuffed tomatoes will not only be a wonderful appetizer but also a light main dish, perfect for a family meal or to impress guests. After we finish stuffing the tomatoes, we can arrange them on a nice platter and decorate them with a few basil leaves. These stuffed tomatoes can be served immediately, but they can also be refrigerated for an hour to be even more refreshing. Enjoy your meal!
