Cookie Cake (Vegan)

To prepare a delicious cake with a biscuit base and a rich filling, the beginning is essential. We start by melting the margarine in a saucepan over low heat, making sure it doesn't burn. Once melted, we add the biscuits, which have been previously crushed using a nut grinder or alternatively, in a bag using a rolling pin. This combination will form the base of our cake. After the biscuits have been homogenized with the melted margarine, we pour the mixture into a tray lined with aluminum foil, making sure to distribute the composition evenly so that the base is perfectly spread. It is important that this is well compacted to achieve a stable texture. After we finish, we let the tray cool for 50-60 minutes to harden. In parallel, we take care of the filling that will add extra flavor to the cake. In a separate saucepan, we add the sugar along with water, cocoa, and margarine. We let all the ingredients melt together, stirring constantly to avoid lumps. Once we have obtained a homogeneous syrup, we remove the saucepan from the heat and add the rum. If you prefer a more intense flavor, you can use rum essence, and in this case, it is recommended to add a little more water to compensate. After the filling has cooled slightly, it is time to add the crushed biscuits and the diced rahat, carefully mixing to incorporate all the ingredients. The resulting composition will be quite thick, but it is essential to ensure that everything is well homogenized. When we are satisfied with the consistency of the filling, we gradually pour the sugar syrup over it, continuing to stir to allow the ingredients to combine perfectly. After we have finished preparing the filling, we carefully pour it over the biscuit base, ensuring it is evenly distributed. To finish the preparation, we sprinkle a generous layer of coconut on top, which will not only add an attractive appearance but also a delicious taste. We let the cake cool to harden well, at least two hours, but ideally, we should leave it overnight. This way, the flavors will intensify, and each slice will be a true delight for the senses. Served cold, the cake will be an ideal dessert for any occasion, easy to prepare and with a special taste.
