Bragioli - Maltese recipe

To prepare these delicious meat rolls, we start by making sure we have all the ingredients at hand. So, we need ground beef, various spices, onion, and of course, an ingredient that will add extraordinary flavor - rice. We begin by mixing the spices well with the ground beef, ensuring that each piece of meat is well coated. At this stage, you can use a combination of salt, pepper, sweet or smoked paprika, and maybe even a pinch of garlic or thyme to add an extra flavor. Once we have a uniform mixture, we turn our attention to the onion. We peel and finely chop a large onion, then sauté it in a pan with a little olive oil. The onion should become golden and release its aromas, which will add a pleasant taste to our rolls. When the onion is ready, we add it to the meat and spice mixture, mixing well to integrate all the ingredients. Now, it’s time to add half a cup of washed rice, which will absorb all the flavors and help bind the composition. We continue to mix, ensuring that the rice is evenly distributed throughout the mixture. This mixture is now ready to be rolled in dough sheets or cabbage leaves, depending on your preferences. We prepare a tray in which we will place the rolls. If we are using cabbage leaves, we can blanch them a little to make them more pliable. We take a portion of the meat mixture, place it on the cabbage leaf or dough sheet, and begin to roll, being careful to fold the edges to seal the filling. We continue until we finish all the mixture. Once all the rolls are ready, we arrange them nicely in the tray. On top, we can add a tomato sauce or a yogurt marinade for extra flavor. We cover the tray with aluminum foil and place it in the preheated oven at 180 degrees Celsius, letting them bake for about 45 minutes. In the end, the rolls will be tender, flavorful, and ready to be served with a side of vegetables or a fresh salad. Enjoy your meal!
