In a generous bowl, we will start by mixing the soft butter, sour cream, sugar, and egg yolk until the mixture becomes smooth and creamy. This step is essential, as the butter and sour cream will give the dough a fine texture and rich flavor. We then add the baking powder, which will help the dough rise beautifully during baking, and the sugar with vanilla pod, which will bring an irresistible aroma. Gradually, we begin to incorporate the flour, mixing gently until we obtain a non-sticky dough that easily pulls away from the bowl's walls. We form a ball from the dough, wrap it in plastic wrap, and let it chill in the refrigerator for 20-30 minutes. This step is crucial, as cooling the dough will make it easier to handle. For the filling, we take the cheese, which we break into pieces by hand and transfer to the food processor. We will mix the eggs together with the egg whites and a pinch of salt, then add them over the cheese in the processor. We try to obtain a smooth mixture, so we add the sugar and mix again until everything becomes creamy. Once we achieve this consistency, we transfer the mixture to a large bowl. Here, we will carefully incorporate the mascarpone, the sugar with vanilla pod, the grated lemon zest for a fresh note, and the raisins, keeping a few for decoration. Finally, we add a little semolina, which will help thicken the filling and add a pleasant texture. We take the dough out of the refrigerator and sprinkle flour on the work surface. We roll out a sheet of dough to the right thickness, then grease a tart pan with margarine and line it with parchment paper. We place the sheet of dough in the pan, covering the edges, and using a fork, we prick it all over to prevent puffing during baking. We pour the cheese filling and level it with a spatula to obtain an even surface. Beat an egg into a foam, and with a brush, we glaze the tart, then add the reserved raisins in a cross shape on top. We place the pan in the preheated oven and bake for 50-60 minutes, until the tart is well baked and takes on a tempting golden hue.
