Spicy Zucchini Salad

Wash the zucchini under a stream of cold water, making sure to remove any impurities. Cut off both ends of the zucchini, then use a vegetable peeler to remove the skin. This adds a pleasant texture to the dish, but if you prefer a finer texture, you can skip it. After peeling, cut the zucchini lengthwise in half, making sure to make precise cuts so that each half is even. Using a spoon or a melon baller, scoop out the seeds from inside each half and remove the curved ends, which can be tougher and less pleasant to taste. Now cut the zucchini halves lengthwise into thin slices, then continue cutting them into equal-sized strips. These strips will later be cut crosswise into cubes, so ensure the sizes are uniform for even cooking. Place the zucchini cubes in a pot of boiling water to which you have added homemade vegetable stock, a natural seasoning that will enhance the zucchini's flavor. Let them boil for about 15 minutes or until they become soft, but do not let them cook too long or they will lose their shape. Once cooked, drain them well and let them cool. Once cooled, mash the zucchini in a large bowl using a blender or a masher to achieve a smooth texture. Add the crushed garlic with salt, freshly ground pepper, and mayonnaise to the zucchini puree. Mix all the ingredients well until the mixture becomes homogeneous. It is important to taste the mixture and adjust the seasonings according to personal preferences. Once you have a creamy and flavorful paste, cover the bowl with plastic wrap and refrigerate for 2-3 hours so that the flavors meld and become more intense. Serve this delicious zucchini paste as a light snack or spread on toasted bread, which will add a crunchy contrast. Additionally, the combination pairs perfectly with cold meatballs and tomatoes, creating a savory and appealing appetizer for any meal. This recipe is not only simple to make but also healthy and full of flavor, ideal for hot summer days or any occasion.
