Wild Garlic Pesto with Pumpkin Seed Oil

To prepare a delicious paste based on fresh ingredients, you need the following ingredients: 200 g of walnuts or almonds, 100 g of sunflower seeds, 50 g of high-quality olive oil, 2 cloves of garlic, the juice of one lemon, salt and pepper to taste, as well as a few fresh basil or mint leaves for added flavor. Start by preparing all the ingredients. If you are using walnuts or almonds, it is recommended to lightly toast them in a dry pan for a few minutes until they become lightly golden and release a pleasant aroma. This step is not mandatory, but toasting will enhance the flavors and add depth to the paste. Once cooled, place the walnuts or almonds in a blender. Add the sunflower seeds, which will bring a crunchy texture and a slight nutty flavor. The next step is to add the peeled garlic cloves; they will give the paste a distinct flavor and a bit of intensity. Squeeze the lemon juice, being careful to avoid the seeds, to add a note of freshness and acidity. Pour the olive oil over the ingredients in the blender, which will help emulsify the paste, giving it a creamy consistency. Season with salt and pepper to taste; it is important to taste and adjust the seasoning to achieve a balanced flavor profile. Pulse the blender at medium speed, stopping occasionally to scrape the ingredients from the sides of the bowl, so that you have a smooth paste. Continue blending until you achieve the desired texture, whether you prefer a smooth paste or one with a slightly grainy consistency. Once you have reached the ideal consistency, transfer the paste to a sterilized container or a jar with a tight-fitting lid. Seal the jar well and store it in the refrigerator. This paste is versatile and can be used in various dishes, from spreads and salads to pasta sauces. Enjoy it on warm summer days, alongside fresh vegetables or as an ingredient in your favorite dishes. It will surely become a favorite in your kitchen!
