Although this year we are celebrating only with Roxana, my thoughts fly to Anca, and the promise to prepare a special cake for her remains. Before we start, let’s make sure we have all the ingredients ready and that we’ve set aside a little time to enjoy the cooking process. Our recipe will take approximately 1 hour and 30 minutes, but the result is worth every minute! Preparation time: 30 minutes Baking time: 25 minutes Total time: 1 hour and 55 minutes Servings: 12 Ingredients: For the sponge: - 5 eggs - 5 tablespoons of sugar - 3 tablespoons of flour - 2 tablespoons of cocoa powder - 1 packet of baking powder - A pinch of salt - Chocolate chips (optional) For the strawberry cream: - 250 ml of whipped cream - 3 tablespoons of sweet cream - 1 strawberry yogurt (375 ml) - 1 teaspoon of gelatin - Fresh strawberries (enough for filling and decoration) For the chocolate cream: - 3 tablespoons of chocolate hazelnut spread (like Nutella) - 3 tablespoons of whipped cream For the syrup: - 3 tablespoons of sugar - 200 ml of water - 1 tablespoon of rum For the glaze: - 250 g of chocolate - 4 tablespoons of liquid cream - 50 g of butter Preparing the cake: Step 1: Preparing the sponge 1. Start by separating the eggs, placing the egg whites in a large bowl and the yolks in another bowl. 2. Beat the egg whites with a pinch of salt until stiff peaks form. Gradually add the 5 tablespoons of sugar, continuing to mix until you achieve a glossy meringue. 3. Incorporate the yolks one at a time, mixing gently. 4. In another bowl, combine the flour, cocoa powder, and baking powder, then add this mixture to the meringue, folding gently with a spatula to retain the air in the egg whites. 5. Pour the mixture into a lined cake pan and bake at 180°C for 25 minutes. After 15 minutes, sprinkle the chocolate chips on top. Helpful tip: Make sure the cake pan is well lined to prevent sticking. You can use parchment paper for an even better result. Step 2: Preparing the syrup 1. In a small saucepan, caramelize the 3 tablespoons of sugar until golden. Add 200 ml of water, stirring until the sugar dissolves. Let it boil for a few minutes, then add the rum and let it cool. Step 3: Preparing the strawberry cream 1. Hydrate the gelatin in a little cold water. 2. Whip the cream with the sweet cream until firm. Add the strawberry yogurt and the dissolved gelatin (in the microwave or on a bain-marie). Gently mix to combine the ingredients. Step 4: Preparing the chocolate cream 1. In a bowl, mix the chocolate hazelnut spread with the whipped cream until you achieve a smooth, spreadable mixture. Step 5: Assembling the cake 1. Use the pan in which you baked the sponge and place a plastic wrap on the bottom. 2. Place half of the sponge, soak it with the cooled syrup. Add half of the strawberry cream, then the slices of strawberries. Cover with the other half of the strawberry cream. 3. Soak the other half of the sponge, then spread the chocolate cream on top. Place the sponge with the chocolate cream side down. 4. Cover with plastic wrap and refrigerate until the next day. Step 6: Preparing the glaze 1. In a bain-marie, melt the chocolate, cream, and butter. Mix well until you achieve a smooth glaze. Let it cool slightly before pouring it over the cake. 2. Decorate with strawberries dipped in the glaze. Serving suggestions The chocolate strawberry cake is perfect to be served alongside a scoop of vanilla ice cream or a warm cup of cocoa. You can also add a caramel sauce on top for an extra flavor boost.
