Pasta boiled directly in carrot sauce

To prepare a delicious carrot and cheese pasta recipe, we start by gathering the necessary ingredients. You will need fresh carrots, which will add a crunchy texture and a sweet taste, onion, which will provide a special aroma, your favorite pasta (spaghetti, fusilli, or penne), fresh or dried rosemary, and last but not least, cheese, which can be parmesan, feta, or any other cheese you resonate with. In a large pan, heat the oil over medium heat. When the oil is hot, add the grated carrots, stirring constantly to avoid burning. Add a pinch of salt, which will help draw out the water from the carrots and soften them. If you decided to use onion, now is the time to add it. It will take on a golden color and become soft, bringing a deep flavor to the dish. After the carrots and onion have softened, add the pasta and rosemary, stirring well to allow the flavors to mingle. It is essential to stir constantly so that the pasta does not stick together. Once the ingredients are well integrated, gradually add the hot broth, ensuring that the broth remains warm throughout the cooking process to avoid thermal shock. It is important to add about 300 ml of broth at the beginning and keep the heat at a medium intensity. As the pasta absorbs the liquid, gradually add more broth as needed. Each type of pasta absorbs liquid differently, so it is good to monitor and test them periodically. Cook the pasta until it reaches the desired consistency, al dente or more cooked, depending on your preferences. When the pasta is cooked to your liking, turn off the heat and add the chosen cheese. Mix well so that the cheese melts and integrates perfectly into the dish, providing a delicious creaminess. Serving can be done immediately, and for a more attractive appearance, you can sprinkle some fresh rosemary or cheese flakes on top. This simple yet tasty recipe will delight your taste buds and bring a splash of color and health to your plate. Enjoy your meal!
