Tandoori Chicken and Hibiscus Rice My first encounter with Indian spices happened one ordinary evening when I wanted to try something different with a whole chicken I found in the fridge. I rummaged through the spice shelves, combined yogurt, the spices I had, and a few onions. The result was tandoori chicken, marinated overnight and served with basmati rice colored with hibiscus powder. I've repeated this recipe several times, especially when I wanted a flavorful meal without complicated steps. Quick Info Total Time: approx. 24 hours (includes overnight marinating) Active Prep Time: 30 minutes Cooking Time: approx. 2 hours Servings: 4-6 Difficulty: medium Recipe Type: main / weekend meal Ingredients For the chicken: 1 whole chicken 5 tablespoons yogurt Tandoori spice mix: 10 g garlic powder 10 g ground cloves 30 g coriander 10 g fenugreek 10 g ground cinnamon 10 g ground black pepper 15 g nutmeg 25 g cumin 10 g cardamom 10 g red food coloring powder 5 large onions For the rice: Basmati rice (1 cup) 2 cups water 2 tablespoons butter Hibiscus powder (to taste) 1 teaspoon harissa Preparation Steps 1. Preparing the chicken Wash the chicken well and place it in a large bowl. Score the thighs and breast down to the bone to help the marinade penetrate the meat better. 2. Marinade In a separate bowl, mix the yogurt with all the tandoori spices, including the red food coloring. Stir until it forms a smooth paste. 3. Marinating Pour the marinade over the chicken and rub it well all over, including into the scored areas. Cover and refrigerate overnight. 4. Preparing for the oven The next day, slice the onions into thick rings (about 2 cm). In a baking dish, drizzle a thin layer of oil and arrange the onion rings to cover the bottom of the dish. 5. Baking Place the marinated chicken on top of the onions. Put the dish in the oven on low heat and let the chicken cook for about 2 hours. Check if it's tender and easily pulls away from the bone. 6. Onion sauce After baking, scrape the sauce and remaining onions from the dish into a tall bowl. Use an immersion blender to turn the mixture into a smooth sauce. 7. Rice Measure the rice and rinse it if needed. In a pan, melt the 2 tablespoons of butter. Add the hibiscus powder and the teaspoon of harissa, stir, then add the rice. Mix briefly, add the water, stir again, and let it simmer until all the water is absorbed and the rice is cooked. 8. Serving Serve the tandoori chicken alongside the hibiscus rice. Also, place the onion sauce on the side. Why I Make This Recipe Often I find it easy to adapt with what I have on hand, and the flavors come out clear and balanced. The chicken stays tender and juicy due to the yogurt. The hibiscus rice adds a splash of color and a subtle tangy flavor, different from plain rice. The recipe has no complicated steps, but the result is perfect for a meal with multiple guests or for a day when you want something special without too much effort. Tips and Variations Tips - If the whole chicken doesn’t fit in the dish, it can be cut into large pieces, but don’t reduce the baking time too much. - The red food coloring is just for appearance and doesn’t affect the flavor. You can omit it if you don’t have it or use a natural food coloring. - For a smoother sauce, strain the onions and sauce after blending. Substitutions - Yogurt can be replaced with plant-based yogurt for a dairy-free version. - Fenugreek and cardamom can be omitted if you don’t have them, but the flavor will be less authentic. - If you don’t have harissa, you can use a chili paste, but adjust according to how spicy you want it. Variations - For added texture, you can add a few whole cumin seeds to the rice. - Instead of a whole chicken, you can use only thighs or breasts, but adjust the baking time. - You can serve the chicken with flatbreads or pita instead of rice. Serving Ideas - Tandoori chicken also goes well with a simple salad if you want something lighter. - The onion sauce can be served separately or poured over the meat. - For a complete meal, add lemon slices or plain yogurt on the side. Frequently Asked Questions 1. Can I marinate the chicken for less than 12 hours? Yes, but the flavors won’t penetrate as well. I recommend at least 4-6 hours if you’re in a hurry. 2. Can the chicken be grilled? Yes, the marinated chicken can also be grilled, but watch it closely to prevent burning due to the yogurt and spices. 3. How spicy is the chicken with these spices? The recipe isn’t very spicy; harissa adds a kick to the rice, but you can adjust the spices to your taste. 4. What can I use instead of hibiscus powder? You can skip this ingredient or use a bit of lemon juice for acidity, although it won’t have the specific color. 5. Does the chicken stay juicy after 2 hours in the oven? Yes, the yogurt marinade and low-temperature baking help keep the meat tender. Nutritional Values Estimation for one serving (out of 6): - Calories: ~450 kcal - Protein: ~32g - Fat: ~18g - Carbohydrates: ~37g Values may vary depending on the amount of rice served and how much sauce you use. The tandoori chicken provides plenty of protein, while the rice offers carbohydrates and a touch of fat from the butter. Storage and Reheating The chicken and rice store well in the fridge, in separate containers, for up to 2 days. Reheat the chicken in the oven or microwave, covered, to prevent drying out. The onion sauce can be kept in a small jar in the fridge. The reheated rice may become a bit drier, but you can fix it with a spoonful of water or butter. I do not recommend freezing, as the texture of the rice and onion sauce may suffer.

Preparation

Chicken: I washed the chicken well and placed it in a bowl. In another bowl, I put the yogurt and then the spices, mixing well until the mixture was homogeneous; the coloring gave it a beautiful red color. I scored the thighs and breast down to the bone and then poured the yogurt with spices over the chicken, covering it well and leaving it in the fridge overnight until the next day. The next day, I sliced the 5 onions into thick slices of about 2 cm, in a baking dish I added a little oil, then the onion rings, and placed the chicken on top of the onions. I left it in the oven on low heat for about 2 hours until it was well cooked and the meat was already coming off the bone. After the chicken was ready, there was a sauce left in the baking dish with the juice from the chicken, oil, and onion slices. I put this mixture into a tall bowl and with the help of an immersion blender, I turned it into a fine and aromatic sauce. Rice: For one measure of basmati rice, I use 2 measures of water. In a pan, I added 2 tablespoons of butter, which I let melt, then added hibiscus flower powder and a teaspoon of harissa, then added the rice, mixed well, and then added the water. I let the rice cook until the water was absorbed and the grains were cooked. I served the rice alongside the very good and aromatic tandoori chicken, and I highly recommend you try this recipe! Enjoy your meal!
