Lamb liver with green onions

Lamb Offal with Green Onions: A Paschal Delight Preparation time: 30 minutes Cooking time: 1 hour Total time: 1 hour and 30 minutes Servings: 8 Lamb offal is a traditional Romanian dish, ideal for the Easter table, but not only. This delicious recipe combines the fine flavors of lamb offal with the freshness of green onions and herbs, offering a savory and inviting result. Let's get started! Ingredients: - 500 g heart, liver, and lungs of lamb (cleaned and washed) - 1 large onion - 1 carrot - 1 parsley root - 3-4 eggs - 4 bunches of green onions - 1 bunch of fresh dill - 1 bunch of fresh parsley - 1 lamb casing or a sheet of dough - 1 slice of bread (preferably whole grain) - Salt and pepper to taste - Oil for sautéing Preparation: 1. Start by preparing the lamb offal. Put salted water in a pot and bring it to a boil. When the water starts to boil, add the offal (heart, liver, and lungs) and let them boil for about 15-20 minutes. They should be well cooked, but don’t overdo it, as they can dry out. 2. Meanwhile, clean and finely chop the onion, carrot, and parsley root. In a pan with a little oil, sauté the onion until it becomes translucent, then add the carrot and grated parsley. Sauté them for 5 minutes until they become tender. 3. When the offal is cooked, remove it from the water and let it cool slightly, then chop it finely. In a large bowl, combine the chopped offal with the sautéed vegetables. 4. Add the beaten eggs, fresh herbs (green onions, dill, and parsley), and the slice of bread previously soaked in water and squeezed. Mix the composition well and season with salt and pepper to taste. This is the key stage to getting a tasty offal, so don’t hesitate to taste! 5. If using casing, rinse it well with cold water and place it in a baking dish. If you choose the sheet of dough, spread it evenly in the dish. Pour the offal mixture into the dish, leveling it with a spatula. 6. Preheat the oven to 180°C. Bake the offal for about 45 minutes, or until it turns golden and firm. Check if it’s done by inserting a toothpick; if it comes out clean, the offal is perfect. 7. Let the offal cool in the dish for 10 minutes, then carefully unfold it and let it cool completely on a platter. You can serve it warm or cold, sliced, alongside a fresh green salad or pickles. Variations and practical tips: - For a more intense flavor, you can add some chopped black olives or a tablespoon of tomato paste to the mixture. - If you like more exotic flavors, try adding some spices like cumin or smoked paprika. - The lamb offal keeps well in the fridge for 3-4 days, so it’s perfect for preparing in advance for holidays. This lamb offal with green onions is not just a simple recipe, but also a way to bring the family together around the table. Enjoy every slice and savor the culinary traditions of Romania!
