This pea, rice and sausage stew is served hot as a main dish; the rice absorbs the liquid, while the peas stay soft. I started out thinking of pilaf, but the small bag of frozen peas made me combine them with rice and sausage, and I liked the combination. I serve it while the rice still has a little liquid. Preparation: 20 minutes. Cooking: 69 minutes. Total time: 89 minutes. Serves: 4. Approximately 820 kcal and 31 g protein per serving.

Ingredients

  • 6 semi-smoked sausages
  • 2 medium onions (300 g)
  • 1 medium carrot (100 g)
  • 1 medium green pepper (150 g)
  • 50 ml oil
  • 1000 ml water
  • 150 g frozen peas
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 250 g rice
  • 2 tablespoons tomato paste
  • 5 garlic cloves
  • 15 g fresh dill

Preparation

1. Preheat the oven to 200°C. Arrange the sausages on a baking tray and bake for 20 minutes, until browned. 2. Peel and chop the onions, carrot and pepper, then crush the garlic. Preparing the vegetables takes about 20 minutes. 3. In a pot, sweat the onion, carrot and pepper in 50 ml oil and 100 ml water for 8 minutes, until the onion turns translucent. 4. Add the frozen peas and 100 ml warm water. Add the salt, pepper, thyme and bay leaves, then cook for 8 minutes, until the peas start to soften. 5. Add the rice and 800 ml water. Cover the pot and cook over medium heat for 18 minutes, until the rice absorbs the water and the grains soften. 6. Stir in the tomato paste and crushed garlic. Cook for another 10 minutes, until the sauce thickens. 7. Submerge the sausages in the dish and cook for 5 more minutes. Turn off the heat and add the chopped dill.

Notes

Serve with pickles, especially sour cucumbers, alongside the semi-smoked sausages. Leftovers keep in the fridge in a closed container for up to 3 days; the rice firms up slightly as it cools. Like an everyday pilaf, it thickens as it sits, and the sausages and peas make it more filling. Long-grain rice keeps the grains separate; round-grain rice gives a softer texture and means you need to keep a closer eye on the liquid. Choose semi-smoked sausages with a moderate amount of fat, since very fatty ones leave a lot of grease on the tray. Frozen peas can go straight in from the bag, but break up any large clumps before adding them to the pot. If the rice starts sticking to the bottom before it softens, lower the heat and stir gently; a heavy-bottomed pot keeps the heat steadier.

Can I use canned peas?

Yes, use 150 g drained peas and add them to the pot during the last 5 minutes, along with the sausages.

Can I replace the water with stock?

Yes, use 1000 ml stock instead of water, preferably unsalted, then taste the dish before adding more salt.

What should I do if there is still liquid after the rice has cooked?

Leave the pot uncovered over low heat for another 3 minutes and stir gently, until the liquid reduces a little.

Can I cook the rice separately?

Yes. Cook 250 g rice in 500 ml water for 12-15 minutes, then drain it if any liquid remains and stir it into the pot.
