Preparation Time - Preparation time: 15 minutes - Cooking time: 20 minutes - Total time: 35 minutes - Servings: 4 Ingredients - 1 kg small eggplants (about the size of tomatoes) - 1 red bell pepper - 2 garlic cloves - 300 g mussels (frozen or fresh) - 300 g peeled shrimp - 4-5 tablespoons olive oil - A bunch of fresh parsley - Salt to taste - Optional: green olives stuffed with peppers A Brief History This recipe combines the tradition of cooking seafood with the vegetable essence of eggplant, creating a dish that speaks of simplicity and elegance. Seafood is often associated with coastal regions, where fresh and flavorful, it becomes the star of festive meals. Step by Step 1. Preparing the Ingredients Start by washing the eggplants thoroughly under running water. Cut them in half, and then slice each half into pieces about 1 cm thick. This will allow the eggplants to cook evenly and absorb the flavors. Wash the bell pepper and slice it into half-moons. 2. Cooking the Vegetables Heat a paella pan (or a double-bottomed skillet) over medium heat. It is essential for the pan to be well-heated to achieve even frying. Do not add oil at the beginning; wait for the pan to become incandescent. Toss the eggplants and sliced bell pepper into the pan. This step is crucial, as direct frying without oil will add a slightly smoky note to the eggplants, enhancing their natural flavor. 3. Adding the Oil After about 5-7 minutes, when the eggplants have started to soften and turn golden, add the olive oil. Stir well to coat all the vegetables and give them that appetizing sheen. 4. Adding the Seafood Now it’s time to add the mussels and shrimp to the pan. Mix everything well and let the ingredients cook together for 5-7 minutes, or until the seafood is fully cooked. 5. Seasoning Crush the garlic cloves and add them to the pan, along with the chopped fresh parsley. If you like green olives stuffed with peppers, now is the time to add them too. Stir everything for a few minutes, allowing the flavors to combine. 6. Finalizing the Dish Before serving, adjust the taste with salt. It’s recommended to add salt towards the end to avoid making the vegetables too salty. Chef's Tip For an even more intense flavor, you can squeeze a little lemon juice over the dish before serving. The acidity of the lemon will perfectly balance the sweetness of the eggplant and seafood. Serving Serve the eggplant with seafood on a slice of fresh, crusty bread. The bread will soak up the delicious juices of the dish, adding an extra layer of flavor. This dish pairs wonderfully with a glass of dry white wine or a refreshing lemonade. Calories and Nutritional Benefits This recipe is not only delicious but also nutritious. Eggplants are rich in antioxidants and vitamins, while seafood provides quality protein and Omega-3 fatty acids. A serving contains approximately 350 calories, making it an excellent choice for a light yet satisfying meal. Possible Variations If you want to experiment, you can try other vegetables, such as zucchini or tomatoes, instead of eggplants. Additionally, you can add spices like paprika or herbs to vary the flavors. Frequently Asked Questions 1. Can I substitute seafood with meat? Yes, you can use chicken or turkey, cut into small cubes. Cook the meat until golden before adding the eggplants. 2. How can I make the recipe spicier? Add finely chopped hot pepper during cooking for an extra kick. 3. Can I use frozen eggplants? It is preferable to use fresh eggplants, as the frozen texture may become soft and watery. 4. What other side dishes pair well with this dish? A green salad with yogurt dressing or mashed potatoes are excellent options to complement the meal. Preparation
I heated the solid, double-bottomed paella pan well, brought from Valencia, without adding a drop of oil. Once it was nicely heated, I tossed in the eggplants cut in half, along with a bell pepper sliced into semi-rings. I wanted to fry the vegetables first, not sauté them. Only towards the end, when the vegetables were almost tender as I wanted, I added a little olive oil and mixed well to give them life and shine. Then I added the shrimp and mussels, mixed well, and let it sit for a few minutes. Near the end, I added a whole bunch of parsley and 2 cloves of garlic, as well as green olives stuffed with peppers. Another 3-4 minutes of mixing followed. Only towards the end did I adjust the salt to taste; I didn't want to add it at the beginning. Generally, I tend to use very little salt in my cooking, almost none, much to the evident dismay of those I cook for (this happened on Sunday as well, at a table of 6, when I cooked a duck in the oven and a special dip with 5 types of mushrooms, both quite low on salt). I had a clear craving to eat the eggplants with seafood on fresh bread, and that's exactly what I did. Excellent! A sweet and slightly smoky taste from the eggplants, sweet from the peppers, creamy texture overall. And on the fresh baguette with a crispy crust... pff... I have no more comments.
