Sweet Pickled Green Tomatoes Stuffed with Walnut

To prepare a delicious green tomato jam, the first step is to take care of the fresh green tomatoes. Wash them well under a stream of cold water and then remove the cap from each tomato. Use a hairpin or an unfolded paperclip shaped like an 'S' to extract the seeds from inside the tomato. It is important to be careful not to damage the inner walls of the tomato, as we want to keep their shape. Meanwhile, put a pot of water on the stove to boil. Once the water is boiling, introduce the hollowed green tomatoes. Let them boil for just a few minutes, enough for the skin to come off, without cooking them completely. After taking them out of the water, cool them quickly under a stream of cold water or place them in a bowl with cold water and ice cubes. Once they have cooled, carefully peel the skin from each tomato, and they will look splendid. In addition to the green tomatoes, prepare the nuts. Crack them, remove the seeds, and put them in the oven for a few minutes, so that it is easier to peel the skin. When all the green tomatoes have been peeled, weigh them to determine the amount of sugar you will use. A general rule is to use the same weight of sugar as the green tomatoes. For example, if you have 400 grams of green tomatoes, you will use 400 grams of sugar and 400 ml of water. In a saucepan, combine the sugar with the water and bring them to a boil. While the sugar melts and the liquid begins to boil, fill the green tomatoes with the prepared nuts. When the sugar has completely dissolved and the syrup has begun to boil, add the stuffed green tomatoes. Let them simmer on low heat, stirring gently, until they become glossy and take on a dark hue. After about 30 minutes, add a few slices of lemon to the pot. These will add a note of acidity that will balance the sweetness. Let it boil for another 2-3 minutes, then remove the lemon and turn off the heat. Meanwhile, sterilize the jars and lids in the oven. It is important for them to be hot to prevent breaking due to temperature differences. Fill the jars with the hot green tomatoes and pour the syrup over them, making sure it is still hot. Cover with the lids and turn the jars upside down. This will create a necessary vacuum for preservation and will check if the jars are sealed correctly. Let the jars cool covered with a towel, and then check if all the lids have vacuumed. The green tomato jam is now ready to be enjoyed! Keep the jars in a cool, dark place, and upon opening a jar, you will be able to experience the delicious taste of this preparation.
