Vegetable mille-feuille

I usually don't get too excited about zucchini recipes, but I was curious about how they combine with mozzarella and roasted peppers. I bought a piece of mozzarella, not sure if I would like the result. I went straight to work, without meat this time, to keep the vegetables in the spotlight. The actual preparation time is short, and the result really worked as a main dish. Drain the mozzarella 1-2 hours before use, if you have time. Let it sit on a sieve or in a colander. 2. Wash all the vegetables. Roast the bell pepper directly on the grill, on a board, or in a suitable pan (just like for eggplant). Turn it periodically until the skin blackens evenly. 3. Cut the eggplant and zucchini into medium-thick slices. Sprinkle salt and pepper on both sides, then set them aside for a few minutes. This way, the vegetables will release some water. 4. Heat a pan and lightly oil it with just enough olive oil to cover the surface. Fry each vegetable separately: first the eggplant, then the zucchini. Don't overcrowd them; leave space for browning. Cooking them individually helps preserve the flavor of each vegetable. 5. After the bell pepper is roasted, remove it from the heat. You can place it in a sealed bag for a few minutes – the skin will peel off more easily this way. If you're short on time, you can dip it in cold water for a minute, then dry and peel it. Remove the stem and seeds. 6. Preheat the oven to 210°C. Choose a small baking dish and line it with parchment paper. 7. Cut the roasted bell pepper into pieces or strips, about the size of the vegetable slices. 8. In the prepared dish, layer: roasted bell pepper, slices of mozzarella, eggplant, and zucchini rounds. Alternate until you run out of ingredients, but no more than two layers of mozzarella in total. Between layers, sprinkle a few basil leaves and, if you wish, a little salt and pepper, but don't overdo the flavors. 9. Place the dish in the preheated oven for 5-7 minutes, just enough to melt the mozzarella. No need to keep it longer. 10. Serve on a warm plate, either as a main dish or alongside a piece of grilled meat (if desired). For plating, use a wide knife or spatula to keep the layers as compact as possible. Why I make this recipe often It prepares quickly and doesn't require complicated ingredients. It's useful when I want something lighter or when I need a side dish with grilled meat, but it's also hearty enough as a vegetarian dish. Tips and variations Tips Don't use too much oil. A very thin film on the pan is sufficient. Don't skip the roasted bell pepper or mozzarella – both provide the main flavor. If you have time, drain the mozzarella ahead of time; otherwise, it will release water in the dish. Substitutions The zucchini can be omitted, but the eggplant and roasted bell pepper should be kept. You can use dried basil if you don't have fresh, but the flavor differs. Other types of cheese don't work as well; mozzarella provides the right texture. Variations If you have mushrooms or carrots (as mentioned in the labels), you can add them between layers, sliced thin and briefly fried beforehand. If you want a crunchy texture on top, you can add some toasted breadcrumbs in the last minute in the oven. Serving ideas It can be served hot or at room temperature. Can I use shredded mozzarella (for pizza)? I don't recommend it; it doesn't have the same texture. The ball mozzarella, well-drained, is more suitable. 2. Can I roast the peppers in the oven instead of on the grill? Yes, they can be roasted in the oven, directly on the oven grill, at high temperature. Turn them often until the skin blackens. 3. What do I do if the vegetables release too much water in the dish? Avoid using very wet mozzarella. Also, fry the eggplant and zucchini rounds well beforehand to eliminate excess water. 4. How do I know when it's done in the oven? When the mozzarella has melted and the vegetables are well softened, you can take the dish out. Don't leave it in the oven too long, or everything will become too soft. 5. Can this dish be frozen? I don't recommend it; the texture changes too much upon thawing due to the cheese and vegetables. I don't recommend storing it longer or freezing it. For optimal texture, it's best consumed on the day it's prepared.
