Vegan cabbage patties

Vegan cabbage patties hold together thanks to well-drained cabbage, browning to a golden color while staying soft in the middle. For this vegan version, cooked and chopped cabbage is mixed with semolina, sautéed onion, garlic and vegan mayonnaise. I choose a compact head of cabbage; for seasoning, I used parsley. Prep: 20 minutes. Cook: 24 minutes. Rest: 25 minutes. Total time: 69 minutes. Serves: 4. Approximately 300 kcal and 5 g protein per serving.
Ingredients
- 500 g cabbage
- 1500 ml water
- 1 teaspoon salt
- 100 g semolina
- 100 ml water
- 2 tablespoons oil for the onion
- 1 large onion (200 g)
- 2 cloves garlic
- 2 tablespoons vegan mayonnaise
- 1 tablespoon tomato paste
- 10 g parsley
- 1/2 teaspoon ground pepper
- 1 tablespoon starch (optional)
- 200 ml oil for frying
Preparation
1. Cut the cabbage into pieces. Bring 1500 ml water to a boil with 1/4 teaspoon salt and blanch the cabbage for 4 minutes. 2. Soak the semolina in 100 ml water for 15 minutes while the cabbage cools. 3. Drain the cabbage, pass it through a meat grinder and place it in a bowl. Drain off any remaining liquid well. 4. Chop the onion and sauté it in 2 tablespoons oil for 8 minutes, until lightly golden. 5. Add the onion and semolina to the cabbage. Add the crushed garlic, vegan mayonnaise, tomato paste, parsley, 3/4 teaspoon salt and pepper. Mix and leave the mixture for 10 minutes. 6. If the mixture is still too wet, mix in 1 tablespoon starch. With damp hands, shape it into 8 patties. 7. Heat 200 ml oil in a frying pan and fry the patties in two batches, for 3 minutes on each side, until golden. Transfer them to paper towels.
Notes
I serve them with a tomato and cucumber salad and bread. Semolina contains gluten, so this dish is not suitable for a gluten-free meal. For an even mixture, choose a firm piece of cabbage with healthy leaves and no soft spots. If the ribs are thick, slice them finely before grinding so no tough strands remain in the mixture. Very watery cabbage needs to be drained further, and the patties can fall apart if liquid remains in the bowl. Heads with tough leaves may need another 1-2 minutes of blanching, until softened. If using pre-cut cabbage, weigh 500 g after removing the tough pieces. Keep the patties in a sealed container in the refrigerator for up to 3 days.

How big should the patties be?
Make them about 5 cm wide and 1.5 cm thick so they’re easy to turn in the pan.
Can I bake them instead of frying them?
Yes. Arrange them on baking paper and bake at 200°C for 20 minutes, turning them after 10 minutes.
Why do they stick to the pan?
Let the pan heat for 2 minutes before adding the oil. Add the patties when the oil shimmers on the surface.
