It is ideal to pick them in the morning when the dew is still on them, to preserve the aroma and properties of the flower. In a large 10-liter jar, add 10 liters of filtered or spring water, ensuring it is as pure as possible. Then, add about 15-20 elderflowers, making sure to remove any wilted or damaged ones. These flowers are what will give the elderflower syrup its unmistakable aroma. Cut a fresh lemon into thin slices and add them to the jar. The lemon will not only add flavor but also a pleasant acidity, balancing the sweetness of the sugar. After adding the lemon, it’s time to focus on sugar. You can use about 300-500 grams, depending on your personal preferences regarding sweetness. Mix the sugar well in the water until it dissolves completely. If you prefer a more sour taste, you can also add a pinch of citric acid to intensify the flavor. To bring this drink to life, add a teaspoon of brewer's yeast.
