Sausages with white beans and roasted peppers

Sausages with white beans and roasted peppers are browned separately, then returned to the pan with white beans, roasted peppers and spinach. The onion softens and takes on some color, while the parsley, garlic and lemon leave a tangy green sauce in the pan at the end. I use thick sausages so the slices stay meaty after browning. Prep: 15 minutes. Cook: 23 minutes. Total: 38 minutes. Serves: 4. 393 kcal and about 24 g protein per serving.

Ingredients

  • 4 thick fresh sausages
  • 1 tablespoon olive oil
  • 1 medium onion (150 g)
  • 4 garlic cloves
  • 60 ml water
  • 1 jar roasted peppers (345 g) drained
  • 1 can white beans (410 g) with their liquid
  • 150 g fresh spinach
  • 4 tablespoons fresh parsley
  • 1/2 lemon
  • 1/2 teaspoon ground pepper

Preparation

1. Slice the sausages, cut the onion into large dice and slice the garlic. Cut the roasted peppers into bite-sized pieces and divide the garlic into two equal portions. 2. In a pan, brown the sausages over medium-high heat for 5 minutes, until golden. Transfer them to a plate. 3. In the same pan, add 1 tablespoon of olive oil if needed, then add the onion and 2 garlic cloves. Cook over medium-low heat for 8 minutes, until the onion takes on some color; if the pan dries out, pour in 60 ml of water. 4. Add the roasted peppers and the white beans with their canning liquid. Cook for 5 minutes, until heated through and gently bubbling. 5. Return the sausages to the pan, add the spinach and cook for another 5 minutes, until the leaves soften. 6. Meanwhile, pulse the parsley, lemon zest and juice, and the remaining 2 garlic cloves in a food processor. Stir the paste into the pan and season with pepper.

Notes

You can replace the spinach with 150 g of chard leaves and cook them for another 2 minutes to soften. Serve with toast, perfect for mopping up the juices in the pan. When I want to have the meal ready at a set time, I chop the onion and garlic before heating the pan. Thin sausages brown faster than thick ones. If the peppers are preserved in vinegar, give them a quick rinse before adding them to the pan so their flavor doesn't take over. Canned beans can be salty, so taste before adding any more pepper; the dish keeps in the fridge for up to 3 days.

Frequently asked questions

Can I use smoked sausages?

Yes, use the same 4 sausages and brown them for 2 minutes, just until they take on some color.

Can I use chickpeas instead of white beans?

Yes, add 410 g of drained canned chickpeas and 80 ml of water to the pan.

What should I do if the dish is too runny?

Keep only 100 ml of the liquid from the can of beans; the peppers release some juices into the pan too.

Can I make the parsley mixture ahead of time?

Yes, you can chop it up to 30 minutes ahead and keep it covered until you add it to the pan.
