Let's start with the essential ingredients to create a delicious muffin that will bring a touch of joy to every meal. In a large bowl, we add 500 g of high-quality flour. This will be the base of our recipe. Meanwhile, we take 250 ml of milk and warm it slightly, being careful not to boil it, just enough to dissolve 25 g of fresh yeast. We also add 3 tablespoons of sugar and vanilla sugar to give it a pleasant aroma. We mix the ingredients in the milk well and let it sit for a few minutes until the yeast starts to take effect. After that, we pour the milk mixture over the flour, add 2 egg yolks, 50 g of ground walnuts, and the grated zest of a lemon. It's time to start kneading! If we have a kneading machine, we can let it do all the work for 15-20 minutes. Our dough will be perfect when it becomes elastic and no longer sticks to our hands. After we finish kneading, we cover the dough with a clean towel and let it rise in a warm place until it doubles in volume. When the dough has risen, we turn it out onto the work surface and knead it gently to release the air. We oil the surface and form a long stick about 40-50 cm, from which we cut equal pieces, around 30-35, but we can also opt for smaller portions depending on our preference. Each piece of dough is formed into a round ball and arranged on a tray lined with wax paper, forming a bunch of grapes. It is important to leave a little space between the balls, as they will grow more in the oven. In a bowl, we beat an egg with 2 tablespoons of milk and lightly brush each muffin with this mixture, then let the tray rest for 15 minutes. Meanwhile, we turn on the oven so that it is well heated. Place the tray in the oven and bake for the first 10 minutes at high heat, then reduce the temperature and continue baking until the muffin becomes golden and appetizing. If you are using an electric oven, set it to 190 degrees Celsius and bake for 20-25 minutes. For an intense flavor, in the last minutes of baking, we prepare the syrup from 400 ml of milk which will be boiled together with sugar, to taste, and rum essence. After the muffin is baked, we take it out and soak it with the warm syrup, then leave it in the oven for another 5 minutes. We cover the muffin with a towel and let it cool, and if you want, you can dust it with powdered sugar. This dessert is perfect for any occasion and will bring smiles to the faces of your loved ones.
