Lemon Cake with Honey and White Chocolate Glaze

To prepare these delicious cream sheets, we start by gathering all the necessary ingredients. It is important to have oil, milk, sugar, honey, baking soda, eggs, cinnamon, and flour on hand. These are the basic ingredients for the dough, which will form the delicious layers of our dessert. The first step is to boil the oil, milk, and sugar in a pot. It is essential to stir occasionally to ensure that the sugar dissolves completely. After a few boils, we add the honey and baking soda, mixing well to combine the ingredients. Once we have a homogeneous mixture, we remove it from the heat and begin to incorporate the two beaten eggs, pouring them in a thin stream while continuously mixing. This technique will help us achieve a finer and less elastic dough. After incorporating the eggs, we add the cinnamon, which will add a special flavor to the composition. Next, we will ask for the flour, initially mixing with a spoon to avoid lumps, then we will get our hands a little dirty and knead the dough until it becomes firm and homogeneous. Now that the dough is ready, we will divide it into four equal pieces. Each piece will be rolled out into sheets, having the size of our tray (25x35 cm). To avoid sticking, I recommend sprinkling a little flour on the back of the tray. We bake each sheet for about 7 minutes at a moderate heat in a preheated oven, being careful not to leave them too long, as we want them to remain tender. In the meantime, we can take care of the delicious cream. In a pot, we boil the milk with sugar and a teaspoon of grated lemon peel, then adding the semolina. It is important to stir continuously to prevent sticking. We let it boil until the composition thickens well, after which we set it aside and let it cool for 5 minutes. After cooling, we add the diced butter, mixing everything at maximum speed until we obtain a fluffy cream that will double in volume. Finally, we incorporate the vanilla essence and the juice of a lemon for a fresh taste. Now, it is time to fill the sheets with our delicious cream, ensuring that we distribute it evenly. We let the dessert sit overnight for the flavors to blend perfectly. The next day, we take care of the glaze: we melt the white chocolate in a bain-marie, adding a few tablespoons of milk to achieve the perfect consistency. We glaze each sheet, and our dessert is ready to be enjoyed. Bon appétit!
