Puff pastry tart with cheese and caraway

The puff pastry tart with cheese and caraway is served warm, cut into squares, as a snack or appetizer. The pastry turns golden around the Emmental slices and telemea, with the seeds sprinkled on top. I choose slightly thicker slices of Emmental so they stay visible among the cheeses. Prep: 10 minutes. Cook: 35 minutes. Total time: 45 minutes. Serves: 6. About 600 kcal and 20 g protein per serving.
Ingredients
- 1 packet (400 g) store-bought puff pastry
- 1 egg white
- 6 slices Emmental
- 100 g telemea (Romanian brined cheese)
- 150 g grated cheese
- 1 teaspoon caraway seeds
- 20 g sesame seeds
- 1/2 teaspoon chili flakes
Preparation
1. In about 10 minutes of prep, preheat the oven to 175 °C. Roll out the thawed puff pastry, at room temperature, on a baking sheet lined with parchment paper. 2. Brush the pastry with the egg white. Arrange the Emmental slices and cut the telemea into small pieces, then scatter them over the top. 3. Sprinkle over the grated cheese, caraway and sesame seeds, then the chili flakes. 4. Bake the tart for 35 minutes, until golden. Remove it from the oven, cut it into portions and serve warm.
Notes
Cut it into squares and serve with a green salad dressed simply with vinegar. The tartness goes well with the cheeses. Leftover portions keep covered in the fridge for up to 3 days. Reheat them in the oven, since puff pastry softens in the microwave. Telemea varies a lot in saltiness, so choose a less salty one if you don't want it to overpower the Emmental and grated cheese. Thicker Emmental slices stay more visible in the tart, while very thin ones melt into the other cheeses. Store-bought puff pastry sheets aren't all the same thickness, and a thin sheet browns faster, so check it towards the end of the 35 minutes. You can leave out the sesame if you don't have any, and skip the chili for a version without heat. It brings to mind a hot cheese sandwich, only the edges break apart into crisp layers. Contains gluten, dairy, egg and sesame.
Frequently asked questions
Can I replace the Emmental?
Yes, 6 slices of Gouda can take its place. Choose slices of a similar thickness so they melt in much the same way.
What can I use instead of caraway seeds?
Use 1 teaspoon of fennel seeds. Their flavor is sweeter and more anise-like.
Why is the base still soft?
Telemea with whey can make the puff pastry soggy. Drain the 100 g and pat the pieces dry before arranging them.
