Chocolate and raisin muffins

Chocolate and raisin muffins get an unexpected touch from the raisins, with dark chocolate and yogurt, lightly browned in the oven. Eggs, yogurt and flour make a tender crumb, with dark chocolate chips and raisins scattered through each muffin, visible when cut open. I leave the chocolate chips whole, without breaking them up first. Preparation: 15 minutes. Cooking: 30-40 minutes. Total time: 45-55 minutes. Servings: 12 muffins. Approximately 180 kcal and 5 g protein per serving.
Ingredients
- 4 eggs
- 100 g sugar
- 10 ml oil
- 140 g yogurt
- 250 g flour
- 1 sachet baking powder
- 50 g dark chocolate chips
- 30 g raisins
Preparation
1. Heat the oven to 180°C and prepare the muffin tin. 2. Beat the eggs with the sugar until the mixture doubles in volume. 3. Pour in the oil, then add the yogurt and keep mixing. 4. Sift the flour together with the baking powder. Add the chocolate chips and raisins, then gently fold from the bottom up. 5. Pour the mixture into the muffin cups and bake for 30-40 minutes, until lightly browned.
Notes
You can replace the dark chocolate with the same amount of milk chocolate; the muffins contain gluten, eggs and dairy. A glass of cold milk goes well with them. Small muffin cups bake faster than standard ones, while large ones may need the full 30-40 minutes; keep an eye on how quickly the tops brown. Plumper raisins stay soft in the crumb, and the muffins keep in a sealed container in the fridge for up to 3 days. I got the idea for these muffins from a recipe by GeorgiG.
Frequently asked questions
Can I replace some of the flour with whole wheat flour?
Yes, start with 50 g whole wheat flour and use white flour for the rest; the crumb will be a little denser.
Can I use cranberries instead of raisins?
Yes, use 30 g dried cranberries, the same amount as the raisins.
Why does the middle sink after baking?
The center may not have baked through; leave the tin in for another 5 minutes at 180°C and check whether it has browned.
How much batter should I put in each cup?
Fill the cups two-thirds full so the batter has room to rise.
Can I use Greek yogurt?
Yes, use 140 g plain Greek yogurt. If it is very thick, mix it well with the oil before adding it.
